- Begin by preheating your oven to 300°F (150°C). Slice the peaches and set them aside. Allow the butter to soften at room temperature, or microwave it for 1 minute to soften.
- In a large mixing bowl, combine the softened butter, vanilla extract, Stevia, baking powder, baking soda, and almond flour until a consistent batter is formed.
- Arrange the sliced peaches in a baking dish. Spoon the batter over the peaches, distributing it sporadically. It does not need to cover the peaches evenly.
- Bake in the preheated oven for 25 minutes, or until the topping is golden brown.
- Serve warm. For an added treat, pair with keto-friendly ice cream.
