For the Filling:
- 2 large peaches
- 1 tbsp. Stevia or another low-carb sweetener
For the Topping:
- 1/4 cup butter
- 1/2 tsp. vanilla extract
- 4 tbsp. Stevia or another low-carb sweetener
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 cup almond flour
Begin by preheating your oven to 300°F (150°C). Slice the peaches and set them aside. Allow the butter to soften at room temperature, or microwave it for 1 minute to soften.
In a large mixing bowl, combine the softened butter, vanilla extract, Stevia, baking powder, baking soda, and almond flour until a consistent batter is formed.
Arrange the sliced peaches in a baking dish. Spoon the batter over the peaches, distributing it sporadically. It does not need to cover the peaches evenly.
Bake in the preheated oven for 25 minutes, or until the topping is golden brown.
