For the Filling:

  • 2 large peaches
  • 1 tbsp. Stevia or another low-carb sweetener

For the Topping:

  • 1/4 cup butter
  • 1/2 tsp. vanilla extract
  • 4 tbsp. Stevia or another low-carb sweetener
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 cup almond flour

Instructions
 

  • Begin by preheating your oven to 300°F (150°C). Slice the peaches and set them aside. Allow the butter to soften at room temperature, or microwave it for 1 minute to soften.
  • In a large mixing bowl, combine the softened butter, vanilla extract, Stevia, baking powder, baking soda, and almond flour until a consistent batter is formed.
  • Arrange the sliced peaches in a baking dish. Spoon the batter over the peaches, distributing it sporadically. It does not need to cover the peaches evenly.
  • Bake in the preheated oven for 25 minutes, or until the topping is golden brown.
  • Serve warm. For an added treat, pair with keto-friendly ice cream.
