Preheat your oven to 325°F (163°C). Prepare two baking sheets by lining them with parchment paper.
In a medium bowl, combine 8 ounces of cream cheese with vanilla stevia drops (and an egg yolk, if using). Once mixed, transfer it to a plastic bag or pastry bag.
Separate the egg whites and yolks into two different mixing bowls.
To the yolks, add stevia drops, 3 ounces cream cheese, and whey protein. If using, also stir in the coconut flour. Mix until the consistency is smooth.
In another bowl, whip the egg whites with cream of tartar until stiff peaks form.
Carefully fold the yolk mixture into the beaten egg whites. Use a rubber spatula to cut through the mixture and gently turn, ensuring the beaten egg whites maintain their volume.
Onto each prepared baking sheet, spoon six mounds of the egg batter (total of 12 mounds), and gently flatten each mound.
Pipe the sweetened cream cheese onto the center of each batter circle.
Bake in the preheated oven for 30 minutes.
