Method
- Preheat your oven to 325°F (163°C). Prepare two baking sheets by lining them with parchment paper.
- In a medium bowl, combine 8 ounces of cream cheese with vanilla stevia drops (and an egg yolk, if using). Once mixed, transfer it to a plastic bag or pastry bag.
- Separate the egg whites and yolks into two different mixing bowls.
- To the yolks, add stevia drops, 3 ounces cream cheese, and whey protein. If using, also stir in the coconut flour. Mix until the consistency is smooth.
- In another bowl, whip the egg whites with cream of tartar until stiff peaks form.
- Carefully fold the yolk mixture into the beaten egg whites. Use a rubber spatula to cut through the mixture and gently turn, ensuring the beaten egg whites maintain their volume.
- Onto each prepared baking sheet, spoon six mounds of the egg batter (total of 12 mounds), and gently flatten each mound.
- Pipe the sweetened cream cheese onto the center of each batter circle.
- Bake in the preheated oven for 30 minutes.
