Ingredients
  

For the Cream Cheese Filling:

  • 8 ounces cream cheese softened
  • ½ teaspoon vanilla stevia drops adjustable to taste, see notes for alternatives
  • 1 egg yolk optional

For the Base Egg Dough:

  • 4 eggs separated
  • ¼ teaspoon vanilla stevia drops adjustable to taste, see notes for alternatives
  • 3 ounces cream cheese softened
  • ¼ cup unflavored whey protein
  • 1 tablespoon coconut flour optional
  • ½ teaspoon cream of tartar

Instructions
 

  • Preheat your oven to 325°F (163°C). Prepare two baking sheets by lining them with parchment paper.
  • In a medium bowl, combine 8 ounces of cream cheese with vanilla stevia drops (and an egg yolk, if using). Once mixed, transfer it to a plastic bag or pastry bag.
  • Separate the egg whites and yolks into two different mixing bowls.
  • To the yolks, add stevia drops, 3 ounces cream cheese, and whey protein. If using, also stir in the coconut flour. Mix until the consistency is smooth.
  • In another bowl, whip the egg whites with cream of tartar until stiff peaks form.
  • Carefully fold the yolk mixture into the beaten egg whites. Use a rubber spatula to cut through the mixture and gently turn, ensuring the beaten egg whites maintain their volume.
  • Onto each prepared baking sheet, spoon six mounds of the egg batter (total of 12 mounds), and gently flatten each mound.
  • Pipe the sweetened cream cheese onto the center of each batter circle.
  • Bake in the preheated oven for 30 minutes.
