Garlic Bread Grilled Cheese with Crispy Parmesan Crust

Recipe by Chloe Davis

Pressing finely grated Parmesan directly onto the garlic-buttered sourdough exterior creates a crackly, golden-brown cheese crust that gives way to a molten center of stretchy mozzarella and sharp provolone. Briefly blooming the minced garlic in the skillet first infuses the butter with sweet, mellow garlic flavor so it never scorches on the pan.

  • Total Time15 minutes
  • Yield2 sandwiches (serves 2) 1x

Ingredients

Scale

Garlic-Herb Butter

  • 3 tablespoons (42 g) unsalted butter
  • 3 medium garlic cloves (about 1 tablespoon / 9 g), finely minced
  • 1½ tablespoons (6 g) finely chopped fresh flat-leaf parsley
  • ¼ teaspoon (1.5 g) kosher salt

Sandwiches & Parmesan Crust

  • 4 slices crusty sourdough bread, about ¾-inch (2 cm) thick (6 oz / 170 g total)
  • 1 cup (4 oz / 115 g) shredded low-moisture whole-milk mozzarella
  • ½ cup (2 oz / 55 g) shredded sharp provolone
  • ½ cup (45 g) finely grated Parmesan cheese, divided

Instructions

  1. Bloom the garlic butter: Melt the butter with the minced garlic in a 12-inch nonstick skillet over low heat, stirring constantly with a silicone spatula, until the garlic is fragrant and softened without browning, about 1 minute. Scrape the garlic butter into a small bowl and stir in the parsley and salt.
  2. Build the sandwiches: Brush half of the warm garlic-herb butter evenly over one side of all 4 bread slices. Flip 2 slices so the buttered sides face up, pile the mozzarella and provolone evenly on top, and close the sandwiches with the remaining 2 bread slices, buttered-sides facing in.
  3. Crust the first side: Brush the top exteriors of both sandwiches with half of the remaining garlic-herb butter. Sprinkle ¼ cup (22 g) of the grated Parmesan evenly over the buttered tops and press gently with your fingertips so the cheese adheres in a compact layer.
  4. Steam-melt and crisp the first side: Place the sandwiches Parmesan-side down in the skillet over medium-low heat. Cover the skillet with a lid and cook for 2 minutes so trapped steam begins melting the cheese center. Uncover, brush the upward-facing bread slices with the remaining garlic-herb butter, and press the remaining ¼ cup (22 g) Parmesan onto the tops. Continue cooking uncovered until the bottom Parmesan crust is lacy and deep golden brown, about 2 minutes more.
  5. Crisp the second side and rest: Flip the sandwiches with a wide spatula and cook uncovered over medium-low heat, pressing down gently once or twice, until the second Parmesan crust is crisp and golden brown and the interior cheeses are completely melted, about 3 minutes. Transfer to a cutting board or wire rack and let rest for 2 minutes so the cheese crust firms up before slicing diagonally and serving hot.

Notes

  • Why it works: Sizzling the minced garlic in butter for 1 minute before assembly removes its harsh raw bite and prevents burnt garlic specks, while pressing all the Parmesan onto the outside of the bread—rather than mixing it into the interior butter—ensures every bit of it crisps against the skillet into a lacy frico crust.
  • Shred your own melting cheeses: Pre-shredded bagged mozzarella and provolone are coated with anti-caking starches that keep them from fusing smoothly. Grating cold block cheese on the large holes of a box grater takes 2 minutes and yields a far gooier cheese pull.
  • Grate the Parmesan finely: Use a rasp grater or food processor so the Parmesan turns into a fine, fluffy powder rather than coarse shreds. Fine granules cling evenly to the buttered sourdough and melt into an unbroken, crackly crust instead of sliding off into the pan.
