This New England classic bakes tender, cinnamon-spiced apples beneath a flaky double crust that gets broken into jagged shards, pressed into bubbling juices, and basted with warm maple butter so the edges caramelize crisp. A touch of cornstarch and apple cider turns the pan juices into a glossy, spoonable sauce instead of a watery pool.

  • 1 package (14.1 oz / 400g) refrigerated double pie dough (2 crusts), or homemade dough for a 9-inch double-crust pie, chilled, divided

Spiced Apple Filling

  • 2¼ pounds (1 kg) firm baking apples (such as half Granny Smith and half Honeycrisp), peeled, cored, and cut into ⅓-inch slices (about 7 cups)
  • ⅓ cup (65g) packed dark brown sugar
  • 1 tablespoon (8g) cornstarch
  • 1¼ teaspoons (3g) ground cinnamon
  • ½ teaspoon (3g) fine sea salt
  • ⅛ teaspoon ground nutmeg
  • ¼ cup (60ml) pure maple syrup
  • 2 tablespoons (30ml) apple cider or unfiltered apple juice
  • 2 tablespoons (28g) unsalted butter, cut into small pieces

Maple-Turbinado Topping

  • 1 tablespoon (15ml) heavy cream or whole milk
  • 1½ tablespoons (18g) coarse turbinado sugar
  • 2 tablespoons (28g) unsalted butter, melted
  • 2 tablespoons (30ml) pure maple syrup


Instructions

  1. Line the baking pan: Set an oven rack in the lower-middle position and preheat the oven to 400°F (200°C). Lightly grease a 9-inch square, 2-inch-deep metal or ceramic baking pan. On a lightly floured surface, roll 1 chilled pie crust into a 14-inch square and ease it into the bottom and all the way up the 2-inch sides of the pan, leaving a ½-inch overhang around the rim. Place the pan in the refrigerator while you prepare the apples.
  2. Season the apples: In a large bowl, toss the sliced apples with the dark brown sugar, cornstarch, cinnamon, salt, and nutmeg until every slice is evenly coated and no dry pockets of cornstarch remain.
  3. Layer the filling: Transfer the seasoned apples into the chilled bottom crust and press them down slightly into a flat, compact layer. Whisk together the ¼ cup (60ml) maple syrup and the apple cider in a small measuring cup, pour evenly over the apples, and dot the surface with the 2 tablespoons (28g) cubed butter.
  4. Seal and sugar the top crust: Roll the second pie crust into a 9½-inch square and drape it over the apples. Fold the top pastry edges under the bottom overhang and crimp firmly against the rim of the pan to seal. Brush the top evenly with the heavy cream, scatter the turbinado sugar across the surface, and cut 4 small vents in the center with the tip of a paring knife.
  5. Bake until golden and bubbling: Bake for 40 minutes, until the top pastry is deep golden brown and thick amber juices bubble steadily through the vents.
  6. Dowdy and glaze the crust: Remove the pan from the oven and whisk together the 2 tablespoons (28g) melted butter and 2 tablespoons (30ml) maple syrup in a small bowl. Using a sharp knife, cut the top crust into roughly 1½-inch squares, then use the back of a fork to press about half of the pastry pieces partially down into the hot bubbling juices while leaving the other edges tilted upward. Drizzle the warm maple-butter mixture over the broken pastry shards.
  7. Caramelize and cool: Return the pan to the oven and bake for 10 minutes longer, until the maple-basted crust shards look glossy, deeply toasted, and crisp at the edges. Let cool on a wire rack for 25 minutes so the bubbling juices thicken into a warm, pudding-like sauce before spooning into bowls.

Notes

  • Why it works: Breaking (“dowdying”) the crust 10 minutes before the end of baking—rather than after it comes out of the oven—lets the underside of the pastry soak up the spiced apple juices while the exposed maple-basted peaks toast back to a shatteringly crisp finish.
  • Mix tart and sweet-firm apples: Combining a tart variety like Granny Smith with a sweet, crisp variety like Honeycrisp or Braeburn keeps the filling structured and complex; soft apples like McIntosh break down into applesauce before the crust browns.
