Apple Spice Cake

  • 3/4 cup packed dark brown sugar (160 g)
  • 1/2 cup (120 ml) neutral oil, such as avocado or canola
  • 1/2 cup store-bought apple butter (120 g)
  • 2 large eggs, at room temperature
  • 1 tablespoon vanilla extract
  • 1 1/4 cups all-purpose flour (160 g)
  • 2 teaspoons ground cinnamon
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground allspice
  • 1 medium Honeycrisp or Granny Smith apple (about 7 oz), peeled, cored, and diced into 1/4-inch pieces (about 1 cup)
  • 1/2 cup chopped pecans, toasted (optional)

Salted Maple Glaze

  • 1/2 cup powdered sugar (60 g)
  • 2 tablespoons pure maple syrup
  • 1 tablespoon heavy cream or whole milk
  • Flaky sea salt, for finishing


Instructions

  1. Prep the pan and oven: Preheat your oven to 350°F (175°C). Lightly grease a 9-by-5-inch loaf pan and line it with a parchment paper sling, leaving a couple of inches hanging over the long sides so you can easily lift the cake out later.
  2. Mix the wet ingredients: In a large mixing bowl, aggressively whisk the dark brown sugar, oil, apple butter, eggs, and vanilla extract until the mixture is completely smooth, slightly thickened, and uniform in color (about 1 to 2 minutes).
  3. Incorporate the dry ingredients: Sprinkle the flour, cinnamon, baking powder, kosher salt, baking soda, and allspice evenly over the wet mixture. Switch to a rubber spatula and gently fold the batter just until the last streaks of dry flour disappear. Do not overmix.
  4. Fold in the add-ins: Add the diced apple and toasted pecans (if using). Fold gently 3 or 4 times just to distribute them evenly through the batter.
  5. Bake the cake: Pour the batter into your prepared pan and smooth the top. Bake for 45 to 55 minutes. Sprinkle immediately with a generous pinch of flaky sea salt. Let the glaze set for about 15 minutes before slicing.
