Pumpkin Spice Latte Tiramisu with Caramel Drizzle

This no-bake dessert brings the ultimate coffeehouse vibe home by pairing espresso-soaked ladyfingers with a warmly spiced pumpkin-mascarpone cream. Finished with a crown of piped whipped cream and a sweet caramel drizzle, it’s a stunning, make-ahead masterpiece that totally eliminates the messy pumpkin-straining step of older recipes.

Coffee Dip

  • 2 cups (475 ml) strong brewed coffee or espresso, cooled to room temperature
  • 3 tablespoons (45 ml) coffee liqueur (such as Kahlúa) or dark rum

Pumpkin Cream & Topping

  • 3 cups (710 ml) cold heavy whipping cream
  • 1 cup (113 g) confectioners’ sugar, divided
  • 1 ½ teaspoons (7 ml) pure vanilla extract, divided
  • 16 ounces (450 g) cold mascarpone cheese
  • 1 cup (225 g) 100% pure pumpkin puree (not pumpkin pie filling)
  • 2 teaspoons (4 g) pumpkin pie spice, plus extra for dusting
  • ¼ teaspoon (1 g) kosher salt

Assembly & Garnish

  • 2 (7-ounce / 200 g) packages crisp ladyfingers (Savoiardi), about 40–48 cookies total
  • 3 tablespoons (45 ml) caramel sauce, for drizzling


Instructions

  1. Prep the dip: In a shallow bowl or wide baking dish, whisk together the cooled coffee and coffee liqueur. Set aside.
  2. Whip the cream: In a large bowl using a handheld mixer, or in a stand mixer fitted with the whisk attachment, beat the cold heavy cream, ½ cup of the confectioners’ sugar, and 1 teaspoon of the vanilla extract on medium-high speed. Beat just until stiff peaks form (about 3 to 4 minutes). Do not overmix. Set aside.
  3. Make the pumpkin base: In a separate large bowl, combine the cold mascarpone, pumpkin puree, the remaining ½ cup of confectioners’ sugar, pumpkin pie spice, salt, and the remaining ½ teaspoon of vanilla extract. Beat on medium speed until completely smooth, thickened, and well combined (about 1 minute).
  4. Lighten the filling: Using a rubber spatula, gently fold exactly half of the whipped cream into the pumpkin-mascarpone mixture until no white streaks remain. Store the remaining half of the plain whipped cream in the refrigerator.
  5. Build the first layer: Working quickly, dunk each ladyfinger into the coffee mixture for just 1 to 2 seconds per side—do not let them soak or they will become mushy. Arrange the dipped cookies in a single, tight layer across the bottom of a 9×13-inch baking dish. You may need to snap a few to fill any gaps.
  6. Add the filling: Spoon half of the pumpkin cream over the ladyfingers and use an offset spatula to smooth it into an even layer all the way to the edges.
  7. Build the second layer: Repeat the dipping process with the remaining ladyfingers, arranging a second layer on top of the pumpkin cream. Spread the remaining pumpkin cream evenly over the top.
  8. Pipe and chill: Transfer the reserved plain whipped cream to a piping bag fitted with a large star tip. Pipe decorative stars or swoops over the entire surface of the tiramisu (this mimics the whipped cream on a latte). Cover the dish loosely and refrigerate for at least 4 hours, or ideally overnight, to let the flavors meld and the ladyfingers soften.
  9. Garnish and serve: Just before serving, dust the top generously with pumpkin pie spice and drizzle with the caramel sauce. Slice and serve chilled.

Notes

  • Why it works: By using exactly 1 cup of pumpkin puree instead of a full 15-ounce can, the mascarpone mixture stays thick and stable. This completely eliminates the tedious, messy step of squeezing the moisture out of the pumpkin with paper towels.
  • Make-ahead timeline: Tiramisu is best made a day in advance. The ladyfingers need time to absorb the moisture from the cream and coffee to achieve that perfect cake-like texture. Hold off on the caramel drizzle until right before serving so it doesn’t bleed into the whipped cream overnight.
