  • 4 boneless, skinless chicken breasts (about 1½ lbs / 680g total)
  • ½ cup (120g) full-fat sour cream
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika

  • ½ teaspoon black pepper

Crust & Finish

  • Nonstick cooking spray, for the pan
  • 1 (8-ounce / 225g) bag kettle-cooked potato chips, original flavor
  • ¼ cup (60g) unsalted butter, melted
  • 2 tablespoons hot honey, for drizzling


Instructions

  1. Prep the oven and pan: Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish with the nonstick cooking spray.
  2. Crush the chips: While the bag is still sealed, gently crush the potato chips using your hands or a rolling pin until they are broken into small, bite-sized pieces (avoid crushing them into a fine dust; you want distinct crunchy pieces). Spread half of the crushed chips evenly across the bottom of the prepared baking dish.
  3. Pound the chicken: Place the chicken breasts between two sheets of plastic wrap. Using a meat mallet or heavy rolling pin, pound them to an even ¾-inch thickness so they cook at the same rate.
  4. Mix the coating: In a medium bowl, whisk together the sour cream, garlic powder, smoked paprika, kosher salt, and black pepper.
  5. Coat and assemble: Slather the sour cream mixture evenly over both sides of each chicken breast. Lay the coated chicken directly on top of the chip layer in the baking dish. Press the remaining crushed chips firmly over the top of the chicken so they adhere to the sour cream.
  6. Drizzle and bake: Pour the melted butter evenly over the top layer of chips. Bake uncovered for 18 to 22 minutes, or until the chip crust is deeply golden brown and a meat thermometer inserted into the thickest part of the chicken registers 165°F (74°C).
  7. Finish and serve: Remove from the oven and immediately drizzle the hot honey over the crispy chicken. Serve hot, scooping up any extra buttery, toasted chips from the bottom of the pan.
