Using a flour tortilla instead of traditional pastry dough turns a classic quiche into a lightning-fast, weekday-friendly breakfast. This version builds a rich, custard-like base using a blend of whole eggs, liquid egg whites, and cottage cheese, while a deliberate sprinkle of sharp cheddar on the exposed tortilla creates a savory, crispy cheese rim.

  • ½ cup (120ml) liquid egg whites

Instructions

  1. Preheat and prep: Preheat your oven to 375°F (190°C). Lightly grease an 8-inch round cake pan or an 8-inch oven-safe skillet with nonstick spray.
  2. Form the crust: Gently press the flour tortilla into the bottom of the prepared pan. Fold and pleat the sides as needed so it fits snugly against the walls, creating a natural bowl shape.
  3. Mix the liquid base: In a medium mixing bowl, aggressively whisk the whole eggs, liquid egg whites, cottage cheese, garlic powder, kosher salt, and black pepper until well combined.
  4. Assemble: Scatter the chopped spinach, red bell pepper, scallions, and half of the shredded cheddar cheese evenly across the bottom of the tortilla crust. Pour the egg mixture directly over the vegetables.
  5. Add the crispy crown: Sprinkle the remaining cheddar cheese over the center of the eggs, deliberately scattering some of the cheese directly onto the exposed top edges of the tortilla. (This will bake into a crispy, frico-like rim.)
  6. Bake: Bake for about 18 to 22 minutes, until the center is puffed and set, the tortilla edges are deeply golden and crispy, and a food thermometer inserted into the center of the egg filling reads at least 160°F (71°C). If needed, continue baking until the filling reaches that temperature.
  7. Cool and serve: Let the quiche rest in the pan for 5 minutes before slicing. This allows the eggs to finish setting up so you get clean, sturdy slices. Serve warm.

Notes

  • Why it works: Baking this in an 8-inch pan instead of a standard 9-inch pie dish forces the 10-inch tortilla to reach higher up the sides. This prevents the egg mixture from spilling over the edges and yields a thicker, more substantial slice.
  • Texture variation: If you prefer a completely smooth custard without the small curds of the cottage cheese, simply blend the eggs, whites, and cottage cheese in a blender for 10 seconds before pouring the mixture over the vegetables.
