  • 2 (15-ounce) cans cannellini beans, rinsed and drained
  • ⅓ cup low-sodium vegetable broth
  • ⅓ cup heavy cream
  • 6 ounces fresh baby spinach (about 4 packed cups)
  • ⅓ cup grated vegetarian Parmesan cheese
  • ¼ cup loosely packed fresh basil leaves, torn
  • Crusty bread for serving


Instructions

  1. Toast the panko: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the panko, garlic powder, and a pinch of salt. Cook, stirring constantly, until the breadcrumbs are deeply golden brown and fragrant, about 2 to 3 minutes. Transfer to a small bowl and wipe the skillet clean.
  2. Sauté the aromatics: Return the skillet to medium heat and add the remaining 2 tablespoons olive oil. Add the diced onion and sun-dried tomatoes. Cook, stirring occasionally, until the onions are softened and translucent, 4 to 5 minutes.
  3. Bloom the garlic and deglaze: Stir in the minced garlic and crushed red pepper flakes. Cook until highly fragrant, about 1 minute. Pour in the white wine to deglaze the pan, scraping up any browned bits from the bottom. Let it bubble and reduce until the liquid is mostly evaporated, about 2 minutes.
  4. Simmer the beans: Add the rinsed cannellini beans and vegetable broth to the skillet. Bring to a gentle simmer and let cook for 3 to 4 minutes so the beans absorb the flavors of the broth and aromatics.
  5. Finish the sauce: Reduce the heat to medium-low. Stir in the heavy cream and the baby spinach in handfuls, folding gently until the spinach is fully wilted, about 2 minutes. Remove the skillet from the heat and stir in the vegetarian Parmesan cheese until melted into a velvety sauce.
  6. Garnish and serve: Scatter the torn fresh basil and the toasted garlic panko evenly over the top. Serve immediately, straight from the skillet, with crusty bread on the side for dipping.
