Apple Cinnamon Rolls (The Heavy Cream Method)

Pouring warm heavy cream over these rolls right before baking is the secret to unbelievably soft, gooey edges that rival any bakery. Filled with butter-sautéed apples and warm spices, they are finished with a rich salted caramel cream cheese icing that melts perfectly into every swirl.

Enriched Dough

  • 1 cup (240ml) whole milk, warmed to 110°F (43°C)
  • 1 packet (2 1/4 teaspoons / 7g) instant yeast
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 1/2 cup (113g) unsalted butter, softened
  • 4 to 4 1/4 cups (480g–510g) all-purpose flour, plus more for dusting
  • 1 teaspoon kosher salt

Apple Cinnamon Filling

  • 1 Tablespoon (14g) unsalted butter, for the skillet
  • 3 cups (about 340g) peeled and finely diced baking apples (such as Honeycrisp or Granny Smith)
  • 5 Tablespoons (70g) unsalted butter, very soft
  • 3/4 cup (150g) packed dark brown sugar
  • 1 Tablespoon ground cinnamon
  • 1/2 teaspoon ground cardamom

The Cream Soak

Salted Caramel Cream Cheese Icing

  • 4 oz (113g) cream cheese, softened
  • 3 Tablespoons (42g) unsalted butter, softened
  • 1 cup (120g) confectioners’ sugar
  • 3 Tablespoons (45ml) store-bought salted caramel sauce, plus extra for drizzling
  • 1/2 teaspoon pure vanilla extract
  • 1 small pinch kosher salt


Instructions

  1. Sauté the apples: Melt 1 Tablespoon of butter in a skillet over medium heat. Add the diced apples and cook for 5 to 7 minutes, stirring occasionally, until they begin to soften and release their juices. Transfer to a plate and let them cool completely. (Do not skip cooling, or the hot apples will melt your filling later.)
  2. Mix the dough: In the bowl of a stand mixer fitted with a dough hook, whisk together the warm milk, instant yeast, and granulated sugar. Add the eggs, softened butter, 4 cups of the flour, and kosher salt. Mix on low speed until a rough dough forms.
  3. Knead to windowpane: Increase the speed to medium and knead for 6 to 8 minutes. The dough should pull away from the sides of the bowl and feel tacky but not wet. If it’s sticking heavily to the bowl, add the remaining 1/4 cup flour, a tablespoon at a time. To test for doneness, stretch a small piece of dough: it should stretch thin enough to let light through without immediately tearing.
  4. First rise: Form the dough into a smooth ball and place it in a lightly greased bowl. Cover with a kitchen towel or plastic wrap and let rise in a warm spot for 1 1/2 to 2 hours, or until doubled in size.
  5. Roll and fill: Punch down the dough and turn it out onto a lightly floured surface. Roll it into a 12×18-inch rectangle, ensuring an even thickness. Spread the 5 Tablespoons of very soft butter evenly across the dough, leaving a small border at the edges. Sprinkle the brown sugar, cinnamon, and cardamom evenly over the butter. Finally, scatter the cooled cooked apples across the top.
  6. Shape the rolls: Starting from a long edge, roll the dough up tightly into an 18-inch log. Using a very sharp serrated knife (or unflavored dental floss), slice the log into 12 equal pieces. Place the rolls cut-side up in a greased 9×13-inch baking dish.
  7. Second rise: Cover the baking dish and let the rolls rise for 45 to 60 minutes, until puffy and touching each other. Toward the end of the rise time, preheat your oven to 375°F (190°C).
  8. The cream soak and bake: Drizzle the slightly warmed heavy cream evenly over the puffed rolls. Bake for 22 to 25 minutes. (Check at the 15-minute mark; if they are browning too quickly, tent loosely with aluminum foil). The rolls are done when golden brown and a thermometer inserted into the center roll reads 190°F (88°C). Allow to cool in the pan for 10 minutes.
  9. Make the icing: While the rolls cool, beat the softened cream cheese and butter together until smooth. Add the confectioners’ sugar, salted caramel sauce, vanilla, and a pinch of salt. Beat until creamy and fluffy. Spread generously over the warm rolls, finishing with an extra drizzle of salted caramel if desired.

Notes

  • Why it works: Pouring heavy cream over the unbaked rolls enriches the dough as it bakes. The cream mixes with the brown sugar and cinnamon bubbling out of the swirls, creating a rich, sticky caramel syrup at the bottom of the pan instead of leaving dry edges.
  • Make-ahead overnight instructions: For warm morning rolls, prepare the recipe through step 6. Instead of the second rise, cover the pan tightly and refrigerate for up to 14 hours. The next morning, let the pan sit at room temperature for 1 1/2 to 2 hours until the rolls are puffy. Toward the end of this rise time, preheat your oven to 375°F (190°C). Proceed with the cream soak and baking in step 8.
