Base and Crunch Layer

  • 15 large Medjool dates (about 10 oz / 280g), pitted
  • ⅓ cup (80 ml) well-stirred creamy peanut butter, divided
  • ¼ cup (35 g) roasted salted peanuts, roughly chopped

  • ¾ cup (130 g) high-quality dark chocolate chips
  • 1 ½ teaspoons (7 ml) refined coconut oil
  • Flaky sea salt (such as Maldon), for finishing


Instructions

  1. Prep the base: Line a quarter-sheet pan or large flat plate with parchment paper. Open the pitted dates so they lay flat, arranging them in a tight 3×5 rectangle with the edges slightly overlapping. Place a second sheet of parchment over the dates and use the flat bottom of a heavy glass or measuring cup to firmly press them into a single, seamless layer. Peel off the top parchment.
  2. Add the crunch: Spread a generous ¼ cup of the peanut butter evenly across the pressed dates, leaving a tiny border around the edges. Scatter the chopped peanuts evenly over the top, gently pressing them into the peanut butter so they adhere.
  3. Melt the chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second bursts, stirring well after each, until entirely melted, smooth, and glossy (about 60 to 90 seconds total). Pour the melted chocolate evenly over the peanut layer, using an offset spatula or the back of a spoon to spread it to the edges.
  4. Swirl and salt: Microwave the remaining peanut butter (about 1 tablespoon plus 1 teaspoon) for 10 to 15 seconds until very loose and drippy. Drop small dots of the warm peanut butter over the wet chocolate, then drag a toothpick or skewer through the dots to create a marbled swirl. Sprinkle immediately with flaky sea salt.
  5. Set and serve: Transfer the pan to the freezer for 15 to 20 minutes, or until the chocolate is fully set and matte. Transfer the solid slab to a cutting board and use a sharp chef’s knife to slice into 15 squares.
