Chili Crisp Smashed Gyoza

The viral smash-taco technique meets the classic pork dumpling. By spreading the savory pork filling onto the wrapper before it hits the pan, you get maximum crispiness, zero tedious pleating, and a perfect wide-open canvas for a heavy drizzle of chili crisp.

Pork Filling

  • 2 cups (140g) finely shredded Napa cabbage
  • ½ teaspoon kosher salt
  • 1 pound (450g) ground pork (preferably 80/20 blend)
  • 3 large cloves garlic, grated
  • 2 teaspoons freshly grated ginger
  • ⅓ cup (35g) thinly sliced green onions, plus more for garnish
  • 2 tablespoons (30ml) soy sauce
  • 1 tablespoon (15ml) oyster sauce
  • 2 teaspoons (10ml) toasted sesame oil
  • 1 tablespoon (8g) cornstarch
  • ¼ teaspoon ground white pepper

For Cooking & Serving

  • 1 package (about 30) round gyoza or dumpling wrappers
  • 2 tablespoons (30ml) neutral cooking oil (like avocado or canola), divided
  • Chili crisp, for serving


Instructions

  1. Prep the cabbage: Toss the shredded Napa cabbage and kosher salt together in a large bowl. Let sit for 10 minutes to draw out excess moisture. Working in handfuls, squeeze the cabbage firmly over the sink to drain as much water as possible. Discard the liquid and return the dry cabbage to the bowl.
  2. Mix the filling: To the bowl with the cabbage, add the ground pork, grated garlic, ginger, green onions, soy sauce, oyster sauce, sesame oil, cornstarch, and white pepper. Mix vigorously with your hands or a stiff spatula until the mixture becomes sticky, cohesive, and holds its shape.
  3. Assemble the dumplings: Working in batches, place 1 rounded tablespoon of the pork mixture onto the center of a raw gyoza wrapper. Use the back of a spoon or your fingers to spread the meat in an even, thin layer all the way to the edges of the dough.
  4. Sear the meat: Heat 1 tablespoon of neutral oil in a large nonstick skillet over medium-high heat. Place 5 to 6 prepared wrappers meat-side down into the hot skillet. Press them flat with a wide spatula to ensure even contact. Cook undisturbed for 2 to 3 minutes, until the pork is deeply browned and cooked through.
  5. Crisp the wrapper: Flip the dumplings over so the meat side is facing up. Add 1 tablespoon of water to the pan and immediately cover with a tight-fitting lid. Steam for 1 minute, then remove the lid. Let any remaining water completely evaporate and cook for another 1 to 2 minutes, until the bottom of the wrapper is golden and shatteringly crisp.
  6. Garnish and serve: Transfer the crisped dumplings to a serving platter. Drizzle generously with chili crisp and top with extra sliced green onions. Wipe the skillet clean if needed, add a little of the remaining oil, and repeat with the remaining wrappers and filling.

Notes

  • Why it works: Spreading the meat directly onto the raw wrapper before cooking acts as an anchor. The proteins in the meat bind to the dough as they cook, preventing the wrapper from curling up or separating in the pan.
  • Keep them crispy: Don’t crowd the skillet. Leaving at least half an inch of space between each dumpling allows the steam to escape properly, ensuring the wrappers actually fry rather than steaming into a gummy texture.
