Brown Butter Crust

  • 1/2 cup (113g) unsalted butter
  • 1/3 cup (35g) powdered sugar (confectioners’ sugar)

Pecan-Oat Streusel

  • 1/3 cup (40g) pecans, finely chopped
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon fine sea salt
  • 6 Tablespoons (85g) unsalted butter, cold and cubed

Apple Filling

  • 3 medium baking apples, peeled and sliced 1/4-inch thick (about 3.5 cups or 350g)
  • 1/4 cup (50g) packed dark brown sugar
  • 1 Tablespoon (15ml) fresh lemon juice
  • 1 Tablespoon (8g) cornstarch
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger

Finishing

  • 1/4 cup (60ml) high-quality store-bought or homemade salted caramel sauce
  • Flaky sea salt, for sprinkling


Instructions

  1. Prep the pan and oven: Preheat your oven to 350°F (175°C). Line an 8×8-inch square baking pan with parchment paper, leaving enough overhang on the sides to easily lift the bars out later.
  2. Brown the butter: In a small saucepan over medium heat, melt the 1/2 cup of crust butter. Continue to cook, swirling the pan occasionally, until the butter foams, turns golden brown, and smells nutty (about 4 to 5 minutes). Immediately pour it into a medium mixing bowl to stop the cooking and let it cool for 5 minutes.
  3. Mix and bake the crust: To the warm brown butter, whisk in the powdered sugar, vanilla, and fine sea salt until smooth. Add the flour and fold with a spatula until a thick dough forms. Press the dough evenly into the bottom of your prepared pan. Bake for 15 to 18 minutes, or until the edges are just beginning to turn golden.
  4. Prepare the streusel: While the crust bakes, whisk the oats, flour, brown sugar, chopped pecans, cinnamon, and salt together in a separate bowl. Toss in the cold, cubed butter and use your fingers or a pastry blender to cut it in until the mixture holds together in coarse, pea-sized clumps. Place the bowl in the refrigerator to chill.

  6. Assemble and bake: Remove the hot crust from the oven (leave the oven at 350°F). Immediately arrange the apple slices in a tight, even layer over the crust, pressing them down gently so they fit. Scatter the chilled streusel evenly over the apples. Return the pan to the oven and bake for 35 to 40 minutes, or until the topping is deeply golden brown and the apple juices are bubbling around the edges.
  7. Cool and chill: Transfer the pan to a wire rack and let the bars cool at room temperature for 1 hour. Move the pan to the refrigerator to chill for at least 2 hours. This sets the shortbread and the filling for perfectly clean slices.
  8. Garnish and serve: Use the parchment overhang to lift the chilled block onto a cutting board. Slice into 16 squares. Just before serving, generously drizzle the bars with salted caramel sauce and sprinkle with a pinch of flaky sea salt.
