Blooming Cabbage Boil

Taking the viral “cabbage boil” to the next level by cutting the head into a blooming shape, allowing the spicy, citrusy butter to seep deep into every single leaf. It steam-bakes in foil until meltingly tender, then finishes open in the oven for irresistibly crispy, charred edges.

The Cabbage & Spice Rub

  • 1 medium green cabbage (about 2 ½ to 3 lbs)
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun or Creole seasoning
  • 1 tablespoon Old Bay® seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon chicken bouillon powder

The Boil Butter

  • ½ cup (1 stick) unsalted butter, melted
  • 3 cloves garlic, finely minced
  • 1 large lemon, zested and juiced
  • 1 tablespoon Louisiana-style hot sauce
  • Salt and freshly ground black pepper, to taste


Instructions

  1. Preheat and prep: Preheat your oven to 400°F (200°C). Trim the very bottom of the cabbage stem so it sits flat, but leave the core intact at the base to hold the leaves together. Cut a deep crosshatch (grid) pattern into the top of the cabbage, slicing about three-quarters of the way down.
  2. Mix the dry rub: In a small bowl, whisk together the Cajun seasoning, Old Bay, smoked paprika, garlic powder, and chicken bouillon powder.
  3. Season the cabbage: Place the cabbage in the center of a double layer of heavy-duty aluminum foil. Drizzle the cabbage with olive oil, then use your hands to rub about half of the dry spice mixture deep into the cuts and all over the outside.
  4. Make the boil butter: In a medium bowl, whisk together the melted butter, minced garlic, lemon zest, lemon juice, hot sauce, and the remaining half of the dry spice mixture. Pour exactly half of this seasoned butter directly into the center and crevices of the blooming cabbage. Reserve the remaining butter for serving.
  5. Wrap and steam-bake: Bring the edges of the foil up and seal them tightly at the top to trap the steam. Bake for 1 hour and 15 minutes, or until a skewer inserted into the center meets almost no resistance.
  6. Char the edges: Remove from the oven and carefully pull back the foil to fully expose the top of the cabbage (watch out for hot steam). Return the open cabbage to the oven for 10 to 15 minutes, allowing the edges to brown and crisp up.
  7. Finish and serve: Let the cabbage rest for 5 minutes. Season the reserved boil butter with a pinch of salt and black pepper if needed, and spoon it over the crispy cabbage or serve alongside for dipping.

Notes

  • Why it works: The “blooming” cut solves the biggest problem with roasting whole cabbages—bland, dry centers. Deep cuts allow the trapped steam and seasoned butter to penetrate all the way to the core, flavoring the vegetable from the inside out.
  • Foil tip: Don’t skimp on the foil. A tight, double-layer seal is crucial because it essentially “boils” the cabbage in its own juices and the butter before the foil is opened for the final roasting step.
