The Liquid Base

  • ⅓ cup oat milk
  • ¼ cup strong brewed coffee or espresso, cooled
  • ¼ cup pure pumpkin purée
  • 1 scoop vanilla protein powder (about 30g)
  • 1 Tablespoon maple syrup
  • ½ teaspoon vanilla extract

The Dry Ingredients

  • ½ cup old-fashioned rolled oats
  • 1 Tablespoon chia seeds
  • ¾ teaspoon pumpkin pie spice
  • ⅛ teaspoon kosher salt

The Yogurt “Cold Foam” Topping

  • 2 Tablespoons plain or vanilla Greek yogurt
  • 1 Tablespoon oat milk
  • A pinch of cinnamon or extra pumpkin pie spice for dusting


Instructions

  1. Dissolve the protein: In a mason jar or glass container, combine the oat milk, cooled coffee, pumpkin purée, protein powder, maple syrup, and vanilla extract. Whisk vigorously or seal the jar and shake well until the protein powder is completely smooth and no lumps remain.
  2. Fold in the oats: Add the rolled oats, chia seeds, pumpkin pie spice, and kosher salt to the liquid mixture. Stir thoroughly until the chia seeds are evenly distributed, making sure no dry spots are hiding at the bottom of the jar.
  3. Layer the foam: In a small separate bowl, whisk together the Greek yogurt and 1 Tablespoon of oat milk until it reaches a smooth, pourable consistency (similar to heavy cream). Spoon this mixture evenly over the top of the oats. Dust lightly with cinnamon.
  4. Chill and set: Cover the jar securely and refrigerate for at least 4 hours, or ideally overnight, allowing the oats and chia seeds to fully absorb the liquids. Enjoy cold straight from the fridge.

Notes

  • Why it works: Whisking the protein powder into the wet ingredients before adding the oats and chia seeds prevents the gritty, powdery clumps that often ruin high-protein overnight oats.
  • Coffee strength: If using a cold brew concentrate rather than brewed coffee or espresso, use 2 Tablespoons of concentrate diluted with 2 Tablespoons of water to avoid an overly bitter bite.
