Massaging the kale first makes it tender and easy to pack, while roasted pepitas and edamame add lasting crunch and texture.

Za’atar Hummus Dressing

  • ⅔ cup classic hummus
  • 3 tablespoons fresh lemon juice
  • 1 medium garlic clove, grated or minced
  • 1 teaspoon za’atar seasoning
  • 3 to 4 tablespoons warm water

Bowl Assembly

  • 5 ounces (142g) baby kale (about 6 cups packed)
  • 1 tablespoon extra-virgin olive oil
  • Pinch of kosher salt
  • 2 (8.5-ounce) pouches microwaveable quinoa (or 2½ cups cooked and cooled quinoa)
  • 1½ cups frozen shelled edamame
  • 1 (8-ounce) package refrigerated precooked baby beets, quartered
  • ⅓ cup salted roasted pepitas (pumpkin seeds)
  • 4 mini avocados (or 1 large avocado)


Instructions

  1. Cook the edamame: Prepare the frozen edamame according to package directions to ensure it is fully cooked. Drain well and rinse under cold running water until completely cool. Set aside.
  2. Mix the dressing: In a small bowl, whisk together the hummus, lemon juice, grated garlic, and za’atar. Gradually whisk in the warm water, 1 tablespoon at a time, until the mixture reaches a smooth, pourable consistency. Divide the dressing evenly among 4 small lidded condiment containers.
  3. Tenderize the greens: Place the baby kale in a large mixing bowl. Drizzle with the olive oil and add a pinch of salt. Using your hands, gently massage the leaves for 1 to 2 minutes, until the kale darkens slightly and shrinks in volume by about half.
  4. Assemble the meal prep bowls: Divide the massaged kale evenly among 4 single-serving food storage containers. Top each portion with an equal amount of the quinoa (about ⅔ cup each), cooled edamame, quartered beets, and pepitas. Seal the containers and store in the refrigerator.
  5. Serve: When ready to eat, dice 1 mini avocado (or ¼ of a large avocado) and add it to the bowl. Drizzle with one container of the za’atar hummus dressing and toss thoroughly to combine.

Notes

  • Why it works: Massaging the baby kale breaks down its tough cellular structure. Not only does this make the greens much more pleasant to eat raw, but it also drastically reduces their volume so they fit neatly into standard meal prep containers without crushing the other ingredients.
  • Storage and prep: The assembled bowls and the dressing will keep in the refrigerator for up to 4 days. Always wait to slice and add the avocado until right before eating. If using one large avocado across multiple days, tightly cover the cut surface of the remaining portion with plastic wrap and refrigerate to minimize browning.
