Flaky Salt Halloween Monster Cookies

A sweet, salty, and texturally perfect twist on a spooky classic. We traded standard chocolate chips for rich dark chocolate chunks, reigned in the leavening for a thicker, chewier center, and finished each cookie with flaky sea salt to balance the candy crunch.

Dry Ingredients

  • 2 cups (240g) all-purpose flour
  • 1 ½ cups (135g) old-fashioned rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt

Wet Ingredients

  • 1 cup (2 sticks / 226g) unsalted butter, softened to room temperature
  • ¾ cup (150g) dark brown sugar, packed
  • ½ cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tablespoon vanilla extract

Mix-Ins & Toppings

  • 1 cup (170g) dark chocolate chunks
  • 1 cup (150g) Halloween-colored M&Ms (plus extra for topping)
  • ¾ cup (75g) roughly chopped salted pretzels
  • Candy eyes (various sizes)
  • Flaky sea salt (such as Maldon), for finishing


Instructions

  1. Prep the oven and pans: Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  2. Whisk the dry ingredients: In a medium bowl, whisk together the flour, old-fashioned oats, baking soda, and kosher salt until well combined. Set aside.
  3. Cream the butter and sugars: In a stand mixer fitted with the paddle attachment (or using a large bowl and a hand mixer), beat the softened butter, dark brown sugar, and granulated sugar on medium-high speed until light, fluffy, and noticeably paler in color, about 2 to 3 minutes.
  4. Add eggs and vanilla: Scrape down the sides of the bowl. Add the eggs one at a time, beating on medium speed until fully incorporated after each addition. Mix in the vanilla extract.
  5. Combine wet and dry: Turn the mixer down to its lowest speed. Gradually add the flour and oat mixture, mixing just until a few flour streaks remain. Do not overmix.
  6. Fold in the mix-ins: Remove the bowl from the mixer. Using a sturdy rubber spatula, gently fold in the dark chocolate chunks, the 1 cup of M&Ms, and the chopped pretzels by hand.
  7. Scoop the dough: Portion the dough into 3-tablespoon sized balls (a #20 cookie scoop works perfectly) and place them about 3 inches apart on the prepared baking sheets.
  8. Bake: Bake one sheet at a time on the middle rack for 10 to 12 minutes, or until the edges are golden brown but the centers still look slightly soft and underbaked.
  9. Decorate and salt: Remove the pan from the oven. Immediately press extra M&Ms and a few candy eyes into the tops of the warm, soft cookies. Sprinkle generously with flaky sea salt.
  10. Cool: Let the cookies rest on the baking sheet for 5 minutes so the centers can set up, then transfer them to a wire cooling rack to cool completely.

Notes

  • Why it works: Waiting to press the candy eyes into the cookies until after they come out of the oven prevents the sugar icing from melting and bleeding in the heat, keeping your monsters looking sharp.
  • Preserving the pretzel crunch: Fold the chopped pretzels in at the very end by hand with a spatula. If you let the electric mixer do this step, the pretzels will pulverize into dust and disappear into the dough.
