We skip the specialty pumpkin butter of older recipes in favor of everyday pumpkin puree, and use a high-heat baking trick to guarantee those coveted, sky-high domed tops.

Cream Cheese Filling

  • 6 ounces (170g) full-fat cream cheese, softened to room temperature
  • 3 tablespoons (24g) powdered sugar
  • 1 large egg yolk

Pumpkin Batter

  • 10 tablespoons (140g) unsalted butter
  • 1 3/4 cups (210g) all-purpose flour
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 1/4 cups (280g) 100% pure pumpkin puree (not pie filling)
  • 3/4 cup (150g) packed dark brown sugar
  • 1/4 cup (50g) granulated sugar
  • 2 large eggs, at room temperature
  • 1 1/2 teaspoons vanilla extract

Crunchy Spice Topping

  • 2 tablespoons turbinado sugar (or other coarse baking sugar)
  • 1/4 teaspoon pumpkin pie spice


Instructions

  1. Brown the butter: Place the butter in a medium skillet or saucepan over medium heat. Allow it to melt, then bubble and foam. Swirl the pan continuously until the bubbling subsides and you see toasted brown specks settle at the bottom with a nutty aroma (about 5 to 7 minutes). Immediately pour the butter (scraping all the browned bits) into a large mixing bowl and let it cool for 10 minutes.
  2. Preheat and prep: Preheat your oven to 425°F (220°C). Line a standard 12-cup muffin tin with paper liners.
  3. Mix the filling: In a small bowl, beat the softened cream cheese, powdered sugar, egg yolk, and vanilla extract until completely smooth. Scrape the mixture into a zip-top plastic bag and set aside.
  4. Whisk the dry ingredients: In a separate medium bowl, whisk together the flour, pumpkin pie spice, baking powder, baking soda, and kosher salt.
  5. Finish the batter: To the bowl with the cooled brown butter, add the pumpkin puree, brown sugar, granulated sugar, eggs, and vanilla. Whisk vigorously until smooth and completely blended. Pour the dry ingredients into the wet ingredients and fold gently with a spatula just until no flour streaks remain. Do not overmix.
  6. Assemble and pipe: Divide the batter evenly among the 12 muffin cups (they will be quite full). Snip a 1/2-inch corner off the zip-top bag holding the cream cheese filling. Insert the tip of the bag slightly into the center of each mound of batter and squeeze gently, depositing about 1 tablespoon of filling into the core of each muffin.
  7. Top and bake: Stir together the turbinado sugar and 1/4 teaspoon pumpkin pie spice. Sprinkle generously over the tops of the muffins. Bake at 425°F (220°C) for 5 minutes, then—without opening the oven door—reduce the oven temperature to 350°F (175°C) and continue baking for another 13 to 15 minutes, or until a toothpick inserted into the muffin portion (avoiding the cream cheese) comes out clean.
  8. Cool: Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool slightly more before serving.

Notes

  • Why it works: The initial burst of 425°F heat rapidly activates the baking powder and creates steam, pushing the batter rapidly upward to create a tall, bakery-style dome. Dropping the heat ensures the center finishes baking without drying out the edges.
