Alfredo Sauce

  • 3/4 cup (180 ml) heavy cream
  • 1 1/4 cups (125 g) freshly grated Parmigiano-Reggiano, plus more for serving
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 teaspoon ground nutmeg
  • Kosher salt and freshly ground black pepper, to taste


Instructions

  1. Boil the pasta: Bring a large pot of heavily salted water to a boil. Cook the fettuccine according to package directions until al dente. Reserve 1 cup of the starchy pasta water, then drain the pasta and set aside.
  2. Fry the topping: In a large, deep skillet over medium heat, melt the butter. Once foaming, add the fresh sage leaves and chopped pecans. Cook, stirring constantly, until the butter turns a deep nutty brown, the sage is crisp, and the pecans are fragrant, about 3 to 4 minutes. Using a slotted spoon, carefully transfer the sage and pecans to a paper towel-lined plate. Leave the browned butter in the skillet.
  3. Aromatics and deglaze: Reduce the heat under the skillet to medium-low. Add the minced garlic and crushed red pepper flakes to the browned butter, stirring for 30 seconds until highly fragrant. Pour in the white wine to deglaze the pan, scraping up any browned bits from the bottom, and let it bubble and reduce for 1 minute.
  4. Build the sauce: Whisk the pumpkin purée and heavy cream into the skillet until smooth. Bring the mixture to a very gentle simmer and let it cook for 2 minutes so the flavors marry and the sauce thickens slightly.

  6. Toss and serve: Add the drained fettuccine to the skillet, tossing vigorously with tongs for about 1 minute to coat the noodles completely. If the sauce feels too thick, splash in a little more reserved pasta water until it reaches a silky consistency. Divide into warm bowls, crush the reserved crispy sage and pecans over the top, garnish with additional Parmigiano-Reggiano, and serve immediately.
