Sheet-Pan Roasted Veggie & Chickpea Bowls with Lemon-Pesto Drizzle

Roasting the chickpeas right alongside the vegetables makes this meal prep bowl entirely hands-off while infusing the beans with savory smoked paprika and garlic. A quick squeeze of lemon thins standard jarred pesto into a bright, vibrant dressing that easily coats the brown rice and charred vegetables.

Sheet-Pan Veggies & Chickpeas

  • 1 large head broccoli, cut into bite-sized florets (about 5 cups / 350g)
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large yellow bell pepper, cut into 1-inch pieces
  • 1 small red onion, cut into 1/2-inch wedges
  • 1 (15-oz / 425g) can chickpeas, rinsed and patted thoroughly dry
  • 3 tablespoons (45ml) extra-virgin olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper

The Base & Drizzle

  • 3 cups (585g) cooked brown rice (from about 1 cup uncooked)
  • 1/3 cup (80g) prepared basil pesto
  • 1 large lemon, juiced (about 2 tablespoons)
  • 1 to 2 tablespoons (15 to 30ml) water, as needed


Instructions

  1. Preheat your oven: Arrange a rack in the center of the oven and heat to 425°F (220°C). For easier cleanup, line a large rimmed baking sheet with parchment paper.
  2. Season the vegetables and beans: Place the broccoli florets, chopped bell peppers, red onion wedges, and patted-dry chickpeas directly onto the prepared baking sheet. Drizzle with the olive oil, then sprinkle evenly with the smoked paprika, garlic powder, kosher salt, and black pepper. Toss well with your hands until everything is evenly coated, then spread into a single layer.
  3. Roast the mixture: Bake for 25 to 30 minutes, tossing halfway through, until the vegetables are fork-tender with charred, caramelized edges and the chickpeas have shrunk slightly. Remove from the oven and let cool slightly for about 10 minutes.
  4. Mix the drizzle: While the vegetables rest, whisk the pesto and lemon juice together in a small bowl. If the mixture is still too thick to drizzle, whisk in water 1 tablespoon at a time until it reaches the consistency of a heavy salad dressing.
  5. Assemble the meal prep containers: Divide the warm cooked brown rice evenly among four shallow, lidded meal prep containers (about 3/4 cup per bowl). Top each with an equal portion of the warm roasted vegetable and chickpea mixture. Divide the lemon-pesto drizzle into four small separate dressing containers.
  6. To reheat and serve: Microwave the rice and vegetable bowl uncovered on High for 1.5 to 2 minutes until steaming hot. Pour the cold pesto drizzle over the warmed bowl just before eating.

Notes

  • Why it works: Thinning the pesto with fresh lemon juice prevents it from clumping into a solid block in the refrigerator, allowing it to coat the rice and vegetables evenly when you’re ready to eat.
  • Food safety & storage: Never leave cooked rice to cool completely at room temperature, as this can encourage rapid bacterial growth. To cool safely and prevent sogginess, divide the warm rice and vegetables into shallow containers and place them in the refrigerator within a maximum of 2 hours. Leave the lids slightly ajar until the steam subsides, then seal tightly. Store for up to 4 days.
