Instructions

  1. Season the chicken: In a medium mixing bowl, toss the diced chicken breasts with the curry powder, garlic powder, ¾ teaspoon kosher salt, and black pepper until the pieces are evenly coated in the spices.
  2. Cook the chicken: Heat the oil in a large skillet over medium-high heat. Add the chicken in a single, even layer. Let it cook undisturbed for 4 to 5 minutes to develop a golden crust, then toss and continue cooking for another 3 to 4 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Remove the skillet from the heat.
  3. Whisk the yogurt sauce: In a small bowl, whisk together the Greek yogurt, lime juice, water, and ¼ teaspoon kosher salt until smooth and drizzleable. Stir in half of the chopped cilantro.
  4. Assemble the bowls: Divide the cooked brown rice and quinoa blend evenly among four single-serving meal-prep containers. Top each portion with the curried chicken, diced red onion, and the remaining chopped cilantro. Nestle a lime wedge into each container.
