Brown Butter Custard Filling

  • 2 tablespoons unsalted butter
  • 3 large eggs, room temperature
  • ¾ cup apple butter
  • ⅓ cup packed dark brown sugar
  • 1 (12-ounce) can evaporated milk
  • 1 tablespoon all-purpose flour
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon kosher salt

Instructions

  1. Brown the butter: Melt the butter in a small skillet over medium heat. Swirl the pan occasionally until the butter foams, subsides, and forms golden-brown specks at the bottom, about 3 to 4 minutes. Immediately pour the brown butter (along with all the toasted bits) into a small bowl and let it cool slightly.
  2. Preheat the oven: Place a heavy baking sheet on the bottom rack of your oven and preheat to 400°F (200°C). (Baking on a hot pan helps crisp the bottom crust.) Place the pie crust in a 9-inch pie dish and crimp the edges as desired.
  3. Mix the dry ingredients and eggs: In a large mixing bowl, whisk together the eggs, dark brown sugar, and flour until completely smooth and no lumps of sugar remain.
  4. Whisk the filling: Whisk in the apple butter, cinnamon, ginger, kosher salt, vanilla extract, and the slightly cooled brown butter. Once smooth, gradually pour in the evaporated milk, whisking gently until the custard is thoroughly combined.
  5. Bake the pie: Pour the filling into the pie crust, then carefully transfer the pie dish onto the hot baking sheet in the oven. Bake at 400°F (200°C) for 15 minutes.
  6. Lower the temperature: Reduce the oven temperature to 350°F (175°C) and continue baking for 30 to 35 minutes.
