Sticky Honey-Sriracha Chicken Meal Prep Bowls

A true one-pan method meets a deeply savory, no-cook glaze in these streamlined meal prep bowls. By roasting the chicken and broccoli side-by-side and tossing the hot chicken directly into a garlic-spiked sauce, the residual heat thickens the honey and sriracha into a glossy coating with half the typical cleanup.

Chicken & Broccoli

  • 1 ½ pounds (680g) boneless, skinless chicken breasts, cut into 1-inch pieces
  • 4 cups (about 340g) broccoli florets, cut into bite-sized pieces
  • 2 tablespoons (30ml) avocado oil or olive oil, divided
  • 1 ½ tablespoons (12g) cornstarch
  • 1 teaspoon (6g) kosher salt, divided
  • ½ teaspoon (1g) freshly ground black pepper

Sticky Honey-Sriracha Glaze

  • 3 tablespoons (63g) honey
  • 2 ½ tablespoons (42g) sriracha
  • 2 tablespoons (30ml) low-sodium soy sauce
  • 1 tablespoon (15ml) rice vinegar
  • 1 teaspoon (5ml) toasted sesame oil
  • 2 cloves garlic, finely grated or minced

For the Bowls

  • 3 cups (585g) cooked brown rice, warmed
  • 3 scallions, thinly sliced
  • 1 tablespoon (9g) toasted sesame seeds


Instructions

  1. Preheat and prep: Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper or heavy-duty aluminum foil for easy cleanup.
  2. Coat the chicken and broccoli: Place the chicken pieces on one half of the prepared baking sheet. Drizzle with 1 tablespoon of the avocado oil, sprinkle with the cornstarch, ½ teaspoon of the kosher salt, and the black pepper. Toss well until the chicken is evenly coated and no dry white spots remain. On the other half of the pan, toss the broccoli florets with the remaining 1 tablespoon of avocado oil and the remaining ½ teaspoon of kosher salt. Spread both the chicken and broccoli into an even, single layer.
  3. Roast: Bake for 15 to 18 minutes, tossing everything halfway through, until the broccoli is tender and lightly browned at the edges, and the chicken is fully cooked through with an internal temperature of 165°F (74°C).
  4. Mix the glaze: While the sheet pan is in the oven, whisk together the honey, sriracha, low-sodium soy sauce, rice vinegar, toasted sesame oil, and grated garlic in a medium mixing bowl.
  5. Glaze the chicken: As soon as the pan comes out of the oven, use tongs to transfer the hot chicken directly into the bowl with the glaze. Toss vigorously. The heat from the chicken will slightly reduce and thicken the sauce into a sticky coating.
  6. Assemble the bowls: Divide the warm brown rice evenly among four shallow meal prep containers. Add a scoop of roasted broccoli to each, then portion out the glazed chicken. Drizzle any remaining sauce from the bowl over the chicken. Finish each portion with a generous scatter of sliced scallions and toasted sesame seeds.

Notes

  • Why it works: Skipping the traditional egg white coating and dusting the chicken with just oil and cornstarch prevents it from cementing to the sheet pan, while tossing the freshly roasted meat in the sauce creates a perfect glaze without needing to reduce anything on the stovetop. The addition of soy sauce and garlic anchors the sweetness of the honey with real savory depth.
  • Make-ahead and storage: Divide the food into shallow containers and refrigerate promptly (within a maximum of 2 hours after cooking) to ensure food safety. Leave the lids slightly cracked until the steam subsides, then seal tightly. Store in the refrigerator for up to 4 days. To reheat, microwave loosely covered for 90 seconds to 2 minutes, or until warmed through.
