  • 2 tbsp (30ml) neutral oil (such as canola or vegetable), divided

  • ½ tsp black pepper

Instructions

  1. Season the chicken: In a medium bowl, toss the whole chicken thighs with 1 tablespoon of the oil, chili powder, cumin, kosher salt, garlic powder, and black pepper until evenly coated.
  2. Sear the thighs: Heat the remaining 1 tablespoon of oil in a large cast-iron skillet over medium-high heat until shimmering. Add the chicken in a single layer. Cook undisturbed for 5 to 6 minutes to develop a dark, crusty sear. Flip and cook for another 4 to 5 minutes, or until the thickest part reaches an internal temperature of 165°F (74°C). Transfer the chicken to a cutting board, leaving the drippings in the skillet.
  3. Chop and crisp: Chop the rested chicken into bite-sized ½-inch pieces. Ensure the skillet is over medium-high heat, then return the chopped meat to the pan. Toss in the hot drippings for 1 to 2 minutes until the edges crisp up. Turn off the heat, squeeze the juice of half a lime over the chicken, and toss to coat thoroughly.
  4. Warm the tortillas: Toast the tortillas in a separate dry skillet or directly over a low gas flame for 15 to 20 seconds per side, until they are pliable and show small charred brown spots. Keep them wrapped in a clean kitchen towel to hold in the steam.
