The viral upside-down cheese trick is the ultimate upgrade for store-bought tube polenta. By baking the rounds directly on top of a layer of grated parmesan, the cheese fuses to the cornmeal to create a lacy, shattered-glass frico crust that packs an incredible savory crunch.

  • 1 (18-oz / 510g) tube pre-cooked polenta (plain or garlic flavor)
  • ¾ cup (65g) finely grated Parmesan cheese
  • 2 tablespoons (30ml) olive oil
  • ½ teaspoon freshly cracked black pepper
  • ¼ teaspoon crushed red pepper flakes (optional)
  • Flaky sea salt, for finishing


Instructions

  1. Prep the oven and pan: Preheat your oven to 425°F (220°C). Line a heavy-duty, rimmed baking sheet with parchment paper. Do not use aluminum foil, or the melted cheese will stick and tear.
  2. Slice and dry: Cut the polenta tube into ½-inch thick rounds (you should get about 12 slices). Using paper towels, carefully pat both sides of each round completely dry. Removing surface moisture is the absolute key to achieving a crispy texture.
  3. Oil the rounds: Using a pastry brush, lightly coat both sides of the dried polenta rounds with the olive oil.
  4. Build the parmesan base: Scatter the grated Parmesan cheese in an even layer across the parchment paper, roughly covering the area where the polenta will sit. Sprinkle the black pepper and red pepper flakes evenly over the cheese.
  5. Press and bake: Arrange the oiled polenta rounds on top of the cheese layer. Press down firmly on each round so the cheese adheres directly to the bottom. Bake on the middle rack for 22 to 25 minutes, without flipping, until the cheese has bubbled, spread, and turned a deep, golden amber around the edges of the polenta.
  6. Cool and snap: Remove the pan from the oven and let it rest undisturbed for 3 to 5 minutes. As it cools, the cheese will harden into a crispy skirt. Use a thin metal spatula to lift the rounds off the parchment, sprinkle lightly with flaky sea salt, and serve warm.
