Instructions

  1. Brown the butter: Place the butter in a medium saucepan over medium heat. Cook, swirling the pan constantly, until the butter foams, subsides, and eventually develops toasted brown specks at the bottom (about 5 to 7 minutes). Immediately pour the browned butter—scraping all the dark bits from the pan—into a large heatproof mixing bowl. Let it cool for 10 minutes.
  2. Whisk the wet ingredients: To the warm browned butter, add the light brown sugar, granulated sugar, and honey. Whisk vigorously for about 1 minute until well combined and smooth. Add the egg and vanilla extract, whisking until the mixture turns glossy and fully emulsified.
  3. Fold in the dry: Sprinkle the flour, kosher salt, ground cinnamon, and baking soda evenly over the wet mixture. Using a rubber spatula, gently fold the dough until the last streak of flour disappears. The dough will be very soft.
  4. Chill the dough: Cover the bowl tightly with plastic wrap and refrigerate for exactly 45 minutes.
