Skip the messy, volcanic stovetop splatters entirely. This hands-off, oven-roasted version caramelizes the pumpkin puree into a deep mahogany spread, flecked with real vanilla bean and heavily spiced with warm aromatics.

Pumpkin Base

  • 1 (15-ounce) can pumpkin puree (425g)
  • 1/2 cup apple cider (120ml)
  • 1/3 cup pure maple syrup (80ml)

  • 1 teaspoon ground cinnamon

Instructions

  1. Prep the oven and pan: Preheat the oven to 350°F (175°C). Select a wide, shallow baking dish (like an 8×8-inch or 9×9-inch ceramic or glass pan)—the larger surface area speeds up evaporation and helps the mixture reduce evenly.
  2. Mix the ingredients: In the baking dish, whisk together the pumpkin puree, apple cider, maple syrup, dark brown sugar, vanilla bean paste, cinnamon, ginger, nutmeg, cloves, and kosher salt until completely smooth.
  3. Roast and reduce: Bake uncovered for 40 to 45 minutes. Remove the dish to carefully stir the mixture every 15 minutes, scraping down the sides. The pumpkin butter is done when it has darkened to a rich, caramelized mahogany color, reduced by about a third, and holds its shape on a spoon without weeping any clear liquid around the edges.
  4. Cool and store: Let the butter cool completely in the dish for about 30 minutes; it will continue to thicken slightly as its temperature drops. Transfer to a clean glass jar or airtight container. Store in the refrigerator for 3 to 4 days, or freeze for up to 3 months for longer storage.

Notes

  • Why it works: Roasting the puree in a wide dish instead of simmering it on the stove eliminates the dangerous, messy splattering typical of boiling fruit butters. The dry heat of the oven also actively caramelizes the maple and brown sugars for a richer, toffee-like depth that stovetop cooking can’t replicate.
  • Spice swap: If you prefer the convenience of a pre-mixed blend, you can substitute 2 teaspoons of pumpkin pie spice for the individual cinnamon, ginger, nutmeg, and cloves.
