Ranch Chicken

  • 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tbsp (15ml) olive oil
  • 1 (1 oz / 28g) packet dry ranch seasoning mix
  • 1/2 cup (120ml) prepared ranch dressing, for serving


Instructions

  1. Preheat and prep: Preheat your oven to 425°F (220°C). Line two large, rimmed baking sheets with parchment paper.
  2. Roast the potatoes: In a large mixing bowl, toss the halved baby potatoes with 1 tablespoon of the olive oil, Parmesan cheese, garlic powder, smoked paprika, and kosher salt until completely coated. Spread them out cut-side down on the first baking sheet. Roast for 25 to 30 minutes, until they are fork-tender and deeply golden and crispy on the bottom.
  3. Roast the broccoli: While the potatoes cook, toss the broccoli florets in the same mixing bowl with the remaining 1 tablespoon of olive oil (from the potato and broccoli ingredient list). Spread them evenly onto the second baking sheet. Add the broccoli to the oven during the final 12 to 15 minutes of the potatoes’ cooking time, roasting until the edges are lightly charred and the stems are tender.
  4. Cook the chicken: Place the cubed chicken in a bowl and toss thoroughly with the dry ranch seasoning mix until evenly coated. Heat the remaining 1 tablespoon of olive oil (from the chicken ingredient list) in a large skillet over medium-high heat. Add the chicken in a single layer and sear for 5 to 7 minutes, tossing occasionally, until golden brown on all sides and the internal temperature reaches 165°F (74°C) on an instant-read thermometer.
  5. Assemble the meal prep bowls: Divide the roasted potatoes, broccoli, and cooked chicken evenly among four shallow meal prep containers. Portion 2 tablespoons of liquid ranch dressing into small individual condiment containers to store on the side. To ensure food safety, do not leave the food out to cool completely; seal and refrigerate the warm containers within 2 hours of cooking. Store in the refrigerator for up to 4 days.
