Pesto-Swirled Chicken Parmesan Bowl

Recipe by Chloe Davis

This 15-minute savory bowl satisfies heavy chicken parm cravings with practically zero effort. A bubbling, cheesy base of marinara and cottage cheese gets a bright swirl of pesto, all topped with crispy, air-fried chicken pieces so they never lose their crunch in the sauce.

  • Total Time15 minutes
  • Yield1 bowl (serves 1) 1x

Ingredients

Scale

Chicken and Base

  • 4 ounces (115g) frozen breaded chicken breast chunks (about 56 pieces)
  • ¾ cup (170g) whole milk cottage cheese (4% milkfat)
  • ⅓ cup (75g) marinara sauce
  • 2 tablespoons (14g) shredded whole milk mozzarella cheese
  • 1 tablespoon (5g) grated Parmesan cheese

Seasonings and Garnish

  • ¼ teaspoon garlic powder
  • ¼ teaspoon dried oregano
  • 1 teaspoon basil pesto
  • Fresh basil leaves, torn (optional)

Instructions

  1. Crisp the chicken: Cook the frozen chicken chunks in an air fryer at 400°F (200°C) for 8 to 10 minutes (or according to package directions), until golden brown, crispy, and heated to an internal temperature of 165°F (74°C). Cut into bite-sized pieces.
  2. Mix the base: While the chicken cooks, combine the cottage cheese, marinara sauce, garlic powder, and dried oregano in a microwave-safe bowl. Stir well to incorporate the seasonings evenly.
  3. Melt the cheese: Sprinkle the shredded mozzarella and Parmesan cheese in an even layer over the cottage cheese mixture. Microwave on High for 60 to 90 seconds, watching closely, until the sauce is bubbling at the edges and the cheeses are completely melted.
  4. Garnish and serve: Drizzle the basil pesto over the melted cheeses and use a spoon to lightly swirl it into the surface. Top immediately with the warm, crispy chicken pieces and fresh basil. Serve hot.

Notes

  • Why it works: Whole milk cottage cheese acts just like ricotta in this bowl, providing a rich, creamy base that melts beautifully under the acidic marinara without separating or turning watery.
  • Keep the crunch: Heating the breaded chicken in the sauce ruins its texture. By heating the cheese base separately and crowning it with the chicken right before eating, you preserve the satisfying contrast between the crispy breading and the creamy sauce.
