Kofta-Spiced Ground Beef Pitas with Sumac Onions

This 20-minute weeknight dinner channels the warm, spiced flavors of classic Middle Eastern kofta into a lightning-fast skillet meal. Hard-searing the ground beef builds incredible crispy edges, while a quick topping of bright, tangy sumac onions cuts right through the richness for a vibrant, perfectly balanced sandwich.

Sumac Onions

  • 1/2 medium red onion, very thinly sliced
  • 1 tablespoon fresh lemon juice (15 ml)
  • 1 teaspoon ground sumac
  • 1/4 teaspoon kosher salt

Kofta-Spiced Beef

  • 1 tablespoon olive oil (15 ml)
  • 1 lb (450 g) ground beef (80/20 or 85/15 preferred)
  • 1/2 medium yellow onion, finely diced
  • 3 large garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon ground allspice
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/3 cup finely chopped fresh flat-leaf parsley

For Serving

  • 2 large round pita breads, halved to form 4 pockets
  • 1 cup diced English cucumber
  • 1 cup quartered cherry tomatoes
  • 1/2 cup plain whole-milk Greek yogurt or tahini sauce


Instructions

  1. Marinate the onions: In a small bowl, toss the sliced red onion with the lemon juice, sumac, and kosher salt. Massage the onions briefly with your fingers until they soften and turn bright pink. Set aside to pickle lightly while you cook the beef.
  2. Sear the beef: Heat the olive oil in a large skillet (cast iron works beautifully here) over medium-high heat until shimmering. Add the ground beef in one even layer, breaking it into large chunks. Let it cook completely undisturbed for 3 to 4 minutes to develop a dark, crispy crust on the bottom.
  3. Aromatize and cook through: Break the beef up further and stir in the diced yellow onion and garlic. Cook for another 3 to 4 minutes until the onions soften and the beef is fully browned with no pink remaining (reaching an internal temperature of 160°F). Drain any excess fat from the pan if desired.
  4. Bloom the spices: Push the meat to the edges of the pan to create a clear spot in the center. Add the tomato paste, cumin, allspice, cinnamon, kosher salt, and black pepper to that open spot. Toast the spices for 30 seconds until very fragrant, then stir everything together to coat the beef evenly. Remove from the heat and stir in the fresh parsley.
  5. Assemble the pitas: Warm the pita halves so they are soft and pliable. Slather the inside of each pocket with Greek yogurt or tahini sauce, then load generously with the spiced beef. Top with the diced cucumber, cherry tomatoes, and a heavy pinch of the pickled sumac onions.

Notes

  • Why it works: Letting the ground beef sear undisturbed before stirring mimics the charred exterior of grilled kofta kebabs, building deep flavor and textural contrast that standard sautéing can’t match.
  • Prep ahead: The spice blend (cumin, allspice, cinnamon, salt, and pepper) can be mixed in a small jar weeks in advance. The sumac onions will keep in an airtight container in the fridge for up to 3 days, becoming delightfully punchier over time.
