Instructions

  1. Bake the brownies: Preheat your oven to 325°F (163°C). Line a 9×13-inch baking pan with parchment paper. Prepare the brownie mix according to package directions, but for a richer, bakery-style flavor, swap the requested oil for an equal amount of melted butter, and replace the water with strong brewed coffee. Bake for 28–32 minutes until a toothpick inserted in the center comes out with moist, fudgy crumbs. Let the brownies cool completely in the pan.
  2. Whip the cheesecake base: In a large mixing bowl, beat the softened cream cheese, 3/4 cup of powdered sugar, and vanilla bean paste on medium speed until completely smooth and creamy, about 2 minutes. Scrape down the sides of the bowl to ensure there are no lumps.
