  • 1 ¼ cups (175 g) fresh blueberries, rinsed and thoroughly dried


Instructions

  1. Preheat and prep: Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  2. Mix the coating: In a small, shallow bowl, combine the ¼ cup of sugar and 1 tablespoon of lemon zest. Rub them together with your fingers until the sugar is fragrant and tinted slightly yellow. Set aside.
  3. Whisk the dry ingredients: In a medium bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt.
