Crispy Persian Baked Rice with Chicken (Tahchin)

This savory baked rice cake delivers the ultimate prize of Iranian cooking: a thick, golden, crispy crust known as tahdig. By trading awkward bone-in pieces for tender shredded chicken hidden inside a saffron-and-yogurt rice custard, the dish slices perfectly like a savory cake. It’s finished with a striking, buttery crown of tart barberries and toasted pistachios that cuts through the richness and makes for a stunning centerpiece.

The Chicken

  • 1 ½ pounds (680g) boneless, skinless chicken thighs
  • 1 medium yellow onion, quartered
  • 3 whole garlic cloves, peeled
  • 1 cinnamon stick
  • 1 teaspoon ground turmeric
  • 1 teaspoon kosher salt
  • 2 cups (475ml) water

The Saffron Rice & Binder

  • 2 ½ cups (450g) long-grain basmati rice, rinsed well
  • ½ teaspoon high-quality saffron threads
  • 3 tablespoons hot water
  • 1 ¼ cups (285g) plain whole milk Greek yogurt
  • 4 large egg yolks
  • 1 large whole egg
  • 6 tablespoons (85g) unsalted butter, melted and divided
  • 1 tablespoon kosher salt (for boiling the rice)

The Jeweled Crown

  • 2 tablespoons (28g) unsalted butter
  • ⅓ cup (40g) dried barberries (or chopped dried tart cranberries)
  • ¼ cup (30g) slivered pistachios
  • 1 teaspoon granulated sugar


Instructions

  1. Bloom the saffron: In a mortar and pestle, grind the saffron threads into a fine powder (a tiny pinch of sugar helps with friction). Transfer to a small bowl, pour in 3 tablespoons of hot water, and let it steep until deep crimson. Set aside.
  2. Cook the chicken: Place the chicken thighs, quartered onion, garlic cloves, cinnamon stick, turmeric, 1 teaspoon of kosher salt, and water into a medium pot. Bring to a boil, then reduce heat to low, cover, and simmer for 35 to 40 minutes until the chicken is fork-tender. Transfer the chicken to a board, shred it into bite-sized pieces, and toss with 1 tablespoon of the bloomed saffron water. Discard the poaching liquid and aromatics.
  3. Parboil the rice: Bring a large pot of water to a rolling boil and add the 1 tablespoon of kosher salt. Add the rinsed basmati rice and boil uncovered for 5 to 6 minutes. The rice grains should be slightly softened on the outside but still have a firm, opaque bite in the center (al dente). Drain immediately and rinse with cool water to stop the cooking.
  4. Mix the crust binder: In a large mixing bowl, whisk together the Greek yogurt, egg yolks, whole egg, 3 tablespoons of the melted butter, and the remaining saffron water. Gently fold in all of the parboiled rice until perfectly coated in the yellow custard.
  5. Layer the dish: Preheat your oven to 400°F (200°C). Pour the remaining 3 tablespoons of melted butter into the bottom of a deep 9-inch round nonstick cake pan (at least 3 inches deep) or a 10-inch nonstick pot. Press exactly half of the saffron-yogurt rice firmly into the bottom and slightly up the sides of the pan. Spread the shredded chicken in an even layer over the rice, leaving a 1-inch border around the edge. Top with the remaining saffron-yogurt rice, pressing down firmly to compact the entire cake.
  6. Bake: Cover the pan tightly with heavy-duty aluminum foil. Bake for 1 hour 10 minutes to 1 hour 20 minutes. The edges should look deeply browned and crisp pulling slightly away from the sides of the pan.
  7. Rest and invert: Remove from the oven and let the pan rest undisturbed for 10 minutes. Run a butter knife around the edge to ensure nothing is sticking, place a large serving platter over the pan, and quickly and confidently flip them together to release the rice cake.
  8. Toast the jeweled crown: In a small skillet over medium-low heat, melt the 2 tablespoons of butter. Add the barberries (or cranberries), pistachios, and sugar. Sauté for 1 to 2 minutes just until the berries plump up and the nuts are fragrant. Spoon this buttery mixture directly over the golden crust before slicing into wedges to serve.

Notes

  • Why it works: Coating all of the rice in the thick Greek yogurt and egg yolk binder creates a sturdy, cohesive structure throughout the entire dish. This prevents the rice from crumbling upon flipping and guarantees a perfect slice, while the bottom layer still develops that signature crispy tahdig.
  • Make-ahead tip: You can poach and shred the chicken up to 2 days in advance, storing it in the refrigerator. This cuts your active prep time in half on the day you plan to bake the rice.
