Instructions

  1. Crisp the capers: Heat the olive oil in a small skillet over medium-high heat. Add the dried capers and fry for 2 to 3 minutes, gently shaking the pan until they burst open and become dark green and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate. Reserve the remaining oil in the skillet.
  2. Whip the base: In a food processor, combine the softened cream cheese, sour cream, lemon juice, lemon zest, fresh dill, black pepper, and salt. Process for about 1 minute, scraping down the sides as needed, until the mixture is exceptionally smooth, light, and airy.
  3. Incorporate the salmon: Add the chopped smoked salmon to the processor bowl. Pulse 6 to 8 times until the salmon is incorporated and finely minced, but still retains small, visible flakes. Avoid running the machine continuously, which will turn the fish into a dense paste.
