Chicken and Aromatics

  • 1 (4- to 5-pound) whole chicken, giblets removed
  • 2 medium lemons, divided
  • 1 head garlic, halved crosswise
  • 4 sprigs fresh thyme

Garlic Herb Butter

  • ¼ cup (57g) unsalted butter, softened
  • 3 cloves garlic, finely minced
  • 1 tablespoon finely chopped fresh thyme
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon freshly ground black pepper


Instructions

  1. Prepare the chicken: Preheat the oven to 425°F (220°C). Pat the chicken completely dry inside and out with paper towels. (Drying the skin is essential for maximum crispness.)
  2. Mix the herb butter: In a small bowl, combine the softened butter, minced garlic, chopped thyme, kosher salt, and black pepper.
  3. Flavor the chicken: Gently loosen the skin over the chicken breasts and rub half of the butter mixture directly onto the meat. Rub the remaining butter over the outside of the skin. Stuff the cavity with the halved garlic head, the thyme sprigs, and 1 lemon (halved).
  4. Roast: Place the chicken in a roasting pan or large cast-iron skillet. Slice the remaining lemon into thick rounds and arrange them around the chicken. Roast for 15 minutes, then reduce the oven temperature to 375°F (190°C).
  5. Finish and temp check: Continue roasting until the skin is deeply golden and an instant-read thermometer inserted into the thickest part of the breast, the deepest part of the thigh, and the wing, avoiding the bone, registers at least 165°F (74°C), about 55 to 65 minutes more.
  6. Rest: Transfer the chicken to a cutting board and let it rest for at least 15 minutes before carving. Serve with the pan juices and the roasted, blistered lemon slices.

  • Why it works: Starting the oven at a high heat jumpstarts the fat rendering process for crispier skin, while dropping the temperature ensures the breast meat remains juicy while the dark meat finishes cooking.
