By roasting the eggplant until caramelized and creamy—rather than struggling to sauté it in a skillet—you get a deeply savory, hands-off vegetable base that folds beautifully into a rich marinara sauce with bright pops of lemon and kalamata olives.

Roasted Vegetables

  • 1 large eggplant (about 1 ½ pounds), cut into ¾-inch cubes
  • 1 large red bell pepper, chopped into 1-inch squares
  • 3 tablespoons (45ml) extra-virgin olive oil
  • 1 teaspoon kosher salt, plus more for the pasta water
  • ½ teaspoon freshly ground black pepper

Crispy Garlic Breadcrumbs

  • 1 tablespoon (15ml) extra-virgin olive oil
  • 1 small clove garlic, finely minced
  • ⅓ cup (20g) panko breadcrumbs
  • Small pinch of kosher salt

Pasta and Sauce

  • 1 pound (454g) short pasta, such as rigatoni or penne
  • 2 tablespoons (30ml) extra-virgin olive oil
  • 4 large cloves garlic, thinly sliced
  • ½ teaspoon crushed red pepper flakes
  • 1 (24-ounce / 680g) jar high-quality marinara sauce
  • ⅓ cup (55g) kalamata olives, pitted and halved
  • Zest and juice of ½ medium lemon
  • ½ cup lightly packed fresh basil leaves, torn
  • Freshly grated Parmesan cheese, for serving (optional)


Instructions

  1. Roast the vegetables: Preheat the oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper. Toss the cubed eggplant and red bell pepper with 3 tablespoons of olive oil, 1 teaspoon of salt, and the black pepper. Spread into an even layer and roast for 20 to 25 minutes, tossing halfway through, until the eggplant is very tender, collapsed, and browned at the edges.
  2. Toast the breadcrumbs: While the vegetables roast, heat 1 tablespoon of olive oil in a large deep skillet or Dutch oven over medium heat. Add the minced garlic and cook just until fragrant, about 30 seconds. Stir in the panko breadcrumbs and a pinch of salt. Cook, stirring constantly, until the breadcrumbs are golden brown and toasted, about 2 minutes. Transfer the garlicky breadcrumbs to a small bowl and wipe the skillet clean.
  3. Boil the pasta: Bring a large pot of heavily salted water to a boil. Add the pasta and cook according to package instructions until just shy of al dente (usually 1 to 2 minutes less than the package directs). Reserve about ½ cup of the starchy pasta water, then drain the noodles.
  4. Build the sauce: In the same skillet used for the breadcrumbs, heat the remaining 2 tablespoons of olive oil over medium-low heat. Add the sliced garlic and crushed red pepper flakes. Sauté just until the garlic is fragrant and barely turning pale gold at the edges, about 1 minute. Carefully pour in the marinara sauce and add the kalamata olives. Bring to a gentle simmer and let it bubble gently for 5 minutes to meld the flavors.
  5. Combine and finish: Fold the drained pasta and the roasted vegetables into the simmering tomato sauce. Toss well to coat. If the sauce seems too thick, splash in a little of the reserved pasta water. Remove the skillet from the heat, then stir in the lemon zest, lemon juice, and torn basil.
  6. Serve: Divide the pasta among shallow bowls. Top generously with the crispy garlic breadcrumbs and grated Parmesan, if using. Serve immediately.

Notes

  • Why it works: Eggplant acts like a sponge. Sautéing it on the stovetop often requires massive amounts of oil or results in a rubbery texture. Roasting at high heat ensures the interior becomes rich and creamy while the exterior caramelizes perfectly, all completely hands-off.
  • Storage and Reheating: Leftovers will keep in an airtight container in the refrigerator for up to 4 days. Because they contain fresh garlic, store any leftover breadcrumbs in a separate airtight container in the refrigerator, then quickly re-toast them in a dry skillet before serving to restore their crunch. (Alternatively, substitute ¼ teaspoon of garlic powder for the fresh garlic in the crumb mixture if you prefer to store them at room temperature.)
