For the Cod

  • 1 ½ pounds (680g) fresh cod fillets, cut into 4 equal portions
  • 1 teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 3 tablespoons (45ml) extra-virgin olive oil, divided

For the Burst Tomato Sauce

  • 1 pint (10 oz / 283g) cherry or grape tomatoes
  • 4 large garlic cloves, thinly sliced
  • ¼ teaspoon crushed red pepper flakes
  • ½ cup (120ml) dry white wine (such as Pinot Grigio or Sauvignon Blanc)
  • 2 tablespoons (17g) capers, drained
  • ½ teaspoon granulated sugar
  • 1 teaspoon fresh lemon zest
  • 1 tablespoon (15ml) fresh lemon juice
  • ½ cup (12g) loosely packed fresh basil leaves, roughly torn


Instructions

  1. Prep and sear the fish: Pat the cod fillets completely dry with paper towels (this ensures a golden crust). Season both sides evenly with the kosher salt and black pepper. Heat 1 tablespoon of the olive oil in a large skillet over medium-high heat. Add the cod and sear until golden brown on the bottom, about 3 to 4 minutes. Carefully flip the fillets, cook for 1 minute more, then transfer them to a plate. (The fish will not be fully cooked yet.)
  2. Blister the tomatoes: Reduce the skillet heat to medium. Add the remaining 2 tablespoons of olive oil. Add the cherry tomatoes and cook, stirring occasionally, until they soften, blister, and begin to burst, about 5 to 7 minutes.
  3. Aromatize the sauce: Stir in the sliced garlic and crushed red pepper flakes. Cook until the garlic is fragrant and softened but not browned, about 1 minute.
  4. Deglaze and simmer: Pour in the white wine, scraping the bottom of the skillet with a wooden spoon to release any browned bits. Let the wine bubble and reduce by half, about 2 to 3 minutes. Stir in the capers, sugar, lemon zest, and lemon juice.
  5. Finish the dish: Nestle the partially cooked cod fillets back into the skillet along with any resting juices from the plate. Spoon some of the tomato sauce over the fish. Let everything simmer gently for 2 to 3 minutes, or until the cod flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  6. Garnish and serve: Remove the skillet from the heat, scatter the fresh torn basil over the top, and serve immediately.
