This version takes everything you love about classic banana pudding and bakes it into a rich, creamy centerpiece with significantly less fuss. By quickly caramelizing the bananas on the stovetop instead of roasting them in their skins, you concentrate their flavor and eliminate excess water for a silky, crack-free filling. The real star, though, is the one-bowl vanilla pudding mousse topping—it whips instant pudding mix directly with heavy cream for a stabilized, airy crown that won’t weep in the fridge.

Vanilla Wafer Crust

  • 2 cups (200g) vanilla wafer crumbs (about 45 to 50 cookies)

  • 1 Tablespoon (14g) unsalted butter
  • 1 teaspoon vanilla extract

Cheesecake Filling

  • 32 ounces (900g) full-fat cream cheese, completely softened at room temperature
  • 1 cup (200g) granulated sugar
  • ¾ cup (170g) full-fat sour cream, at room temperature
  • 4 large eggs, at room temperature
  • 1 large firm-ripe banana, peeled and sliced into ¼-inch coins

One-Bowl Pudding Mousse

  • 1 box (3.4 ounces / 96g) instant vanilla pudding mix
  • 1 cup (240ml) whole milk, very cold
  • 1 cup (240ml) heavy cream, very cold

Garnish

  • Handful of lightly crushed vanilla wafers
  • 1 fresh banana, sliced
  • 1 teaspoon lemon juice


Instructions

  1. Bake the crust: Preheat the oven to 350°F (175°C). Lightly grease a 9-inch springform pan. In a medium bowl, stir together the vanilla wafer crumbs, melted butter, granulated sugar, and kosher salt until the mixture resembles wet sand. Press the crumbs firmly into the bottom and about 1 inch up the sides of the prepared pan. Bake for 10 minutes, then set aside on a wire rack to cool. Lower the oven temperature to 300°F (150°C).
  2. Caramelize the bananas: In a small saucepan over medium heat, combine the mashed overripe bananas, dark brown sugar, and 1 Tablespoon of butter. Simmer, stirring frequently, for 5 to 7 minutes until the mixture darkens, thickens slightly, and smells deeply caramelized. Remove from the heat, stir in the vanilla extract, and let the mixture cool to room temperature.
  3. Mix the cheesecake batter: In the bowl of a stand mixer fitted with the paddle attachment (or using a large bowl and a hand mixer), beat the softened cream cheese on medium speed for 2 minutes until entirely smooth. Add the granulated sugar and beat for 1 minute more. Scrape down the bottom and sides of the bowl.
  4. Add the flavorings and eggs: Reduce the mixer speed to low. Blend in the sour cream and the cooled caramelized banana mixture just until combined. With the mixer still on low, add the eggs one at a time, mixing just until the yolk disappears before adding the next. Do not overmix. Gently fold the batter once or twice with a silicone spatula to ensure there are no hidden pockets of cream cheese.
  5. Layer and prepare the water bath: Pour exactly half of the cheesecake batter into the cooled crust. Arrange the sliced firm-ripe banana coins in a single, even layer over the batter. Gently pour the remaining batter over the top, smoothing it into an even layer. Wrap the bottom and sides of your springform pan tightly in a double layer of heavy-duty aluminum foil, then place it inside a large roasting pan. Carefully pour boiling water into the roasting pan until it reaches halfway up the sides of the springform pan.
  6. Bake the cheesecake: Carefully transfer the roasting pan to the oven and bake at 300°F (150°C) for 1 hour 30 minutes to 1 hour 40 minutes. The edges should be perfectly set, but a 2-inch circle in the very center should still jiggle slightly like gelatin. For food safety and proper setting, an instant-read thermometer inserted into the center must register between 155°F and 160°F (68°C to 71°C).
  7. Cool safely: Turn the oven off completely. Leave the cheesecake in the oven and prop the oven door open slightly with the handle of a wooden spoon. Let it cool gently in the warm oven for exactly 30 minutes. Remove the springform pan from the water bath, discard the foil, and place the cheesecake on a wire rack. Let it cool on the counter for 1 to 1 ½ hours, just until it reaches around 70°F (21°C). Do not let it sit at room temperature for longer than 2 hours total after coming out of the oven.
  8. Chill immediately: Cover the cheesecake loosely with plastic wrap and transfer it to the refrigerator before it is completely cold to rapidly drop its internal temperature safely below 41°F. Chill for at least 8 hours (or up to 2 days) to fully set.
  9. Whip the pudding mousse: When ready to serve, remove the sides of the springform pan and transfer the cheesecake to a serving platter. In a large mixing bowl, combine the dry instant vanilla pudding mix, cold whole milk, and cold heavy cream. Beat on medium-high speed with an electric mixer for 2 to 3 minutes. The mixture will quickly transform into a thick, billowy, mousse-like topping.
  10. Top and serve: Spread or pipe the pudding mousse evenly over the chilled cheesecake. Toss the remaining sliced fresh banana with the lemon juice to prevent browning. Garnish the top of the cheesecake with the banana slices and extra crushed vanilla wafers immediately before slicing and serving.

Notes

  • Why it works: Reducing the mashed bananas in a saucepan cooks out their excess water. Bananas contain a lot of moisture, which is the primary culprit behind cracked cheesecakes and watery batters. Caramelizing them first guarantees a dense, rich texture with concentrated flavor.
  • The mousse shortcut: Using heavy cream as half of the liquid for the instant pudding mix eliminates the need to make a separate batch of whipped cream.
