Apple Cinnamon Cottage Cheese Bites with Crunchy Tops

Recipe by Chloe Davis

These mini baked oatmeal cups pair the comforting flavors of apple and cinnamon with a smooth, blended cottage cheese base. Blending the wet ingredients removes all the cheese curds for a perfectly uniform texture, while a quick sprinkle of raw sugar gives each bite a bakery-style crunch.

  • Total Time40 minutes
  • Yield24 mini bites (serves 12) 1x

Ingredients

Scale

Wet Base

  • 1 cup (225g) whole milk cottage cheese (4% milkfat)
  • ½ cup (115g) unsweetened applesauce
  • 3 tablespoons (45ml) maple syrup
  • 1 large egg
  • 1 teaspoon (5ml) vanilla extract

Dry Ingredients & Mix-Ins

  • 1 ½ cups (135g) old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  • ½ cup (60g) finely diced apple (about ½ medium apple, peeled or unpeeled)

Crunchy Topping

  • 1 tablespoon turbinado sugar (or coarse raw sugar)
  • ¼ teaspoon ground cinnamon

Instructions

  1. Prep the oven and pan: Preheat your oven to 375°F (190°C). Generously grease a 24-cup mini muffin pan or line with paper liners.
  2. Blend the wet ingredients: In a blender or food processor, combine the cottage cheese, applesauce, maple syrup, egg, and vanilla extract. Blend on high for 30 to 45 seconds until the mixture is completely smooth and no curds remain.
  3. Combine the batter: In a medium mixing bowl, whisk together the rolled oats, baking powder, 1 teaspoon of ground cinnamon, and kosher salt. Pour the blended wet mixture over the dry ingredients and stir until just combined. Gently fold in the finely diced apple.
  4. Rest the mixture: Let the batter sit at room temperature for 10 minutes. This resting period allows the oats to absorb the liquids, thickening the batter so the bites bake up tall and tender.
  5. Portion and top: While the batter rests, mix the turbinado sugar and the remaining ¼ teaspoon of cinnamon in a small dish. Scoop the rested batter into the prepared mini muffin pan, filling each cup almost to the brim (about 1 ½ tablespoons per cup). Sprinkle the cinnamon-sugar mixture evenly over the tops.
  6. Bake and cool: Bake for 14 to 16 minutes, or until the edges are golden brown and the centers feel set to the touch. Allow the bites to cool in the pan for 5 minutes before gently removing them. Serve warm, or transfer to a wire rack to cool completely before storing.

Notes

  • Why it works: Blending the cottage cheese eliminates the curd texture entirely, creating a smooth, rich custard that binds the oats perfectly. It provides the moisture and structure of traditional dairy without altering the classic baked oatmeal feel.
  • Make-ahead and freezing: These bites are excellent for meal prep. Let them cool completely, then store in an airtight zip-top bag in the freezer for up to 3 months. Reheat straight from frozen in the microwave for 20 to 30 seconds for a quick, warm snack.
