  • 1 lb (450g) sweet potatoes, peeled and diced into ½-inch cubes
  • 2 tbsp (30ml) olive oil, divided
  • 1 lb (450g) ground turkey (93% lean)
  • 1 medium yellow onion, diced
  • 2 medium zucchini (about 12 oz / 340g total), sliced into ½-inch half-moons
  • 3 large cloves garlic, minced
  • 1 tbsp dried Italian seasoning
  • 1 tsp kosher salt, plus extra for roasting
  • ½ tsp freshly ground black pepper
  • ¼ tsp crushed red pepper flakes (optional)

Instructions

  1. Roast the sweet potatoes: Preheat your oven to 425°F (220°C). On a large rimmed baking sheet, toss the diced sweet potatoes with 1 tablespoon of olive oil and a generous pinch of kosher salt and pepper. Spread into an even layer and roast for 20 minutes, or until fork-tender and slightly caramelized at the edges.
  2. Brown the turkey: While the potatoes roast, heat the remaining 1 tablespoon of olive oil in a large oven-safe skillet (like cast iron) over medium-high heat. Add the ground turkey and diced onion. Cook for 6 to 8 minutes, breaking the meat apart with a wooden spoon, until the turkey is fully browned and cooked through.
  3. Sauté the vegetables: Lower the heat to medium. Stir the zucchini, minced garlic, Italian seasoning, 1 teaspoon kosher salt, black pepper, and red pepper flakes into the turkey mixture. Cook for 4 to 5 minutes, just until the zucchini begins to soften and release some of its moisture. Remove the skillet from the heat.
  4. Combine the filling: Once the sweet potatoes are done roasting, scrape them directly into the skillet with the turkey and zucchini mixture. Toss well to combine everything evenly. (If you don’t have an oven-safe skillet, transfer the turkey mixture and roasted potatoes into a lightly greased 9×13-inch baking dish instead.)
  5. Mix the topping: In a small bowl, combine the grated Parmesan, panko breadcrumbs, and 1 tablespoon of olive oil. Rub the mixture together with your fingers until the breadcrumbs are evenly moistened and crumbly. Sprinkle this topping in an even layer over the skillet.
  6. Bake and serve: Transfer the skillet to the oven and bake for 10 to 12 minutes at 425°F (220°C), until the panko is toasted, the cheese is melted and golden, and the edges are bubbling. Let rest for 5 minutes before serving.
