Creamy Garlic-Lime Sauce

  • ⅓ cup sour cream (80 ml)
  • 3 tablespoons mayonnaise

Smoky Grilled Shrimp

  • 1 lb large shrimp, peeled and deveined (450 g)
  • 1 tablespoon avocado oil or olive oil
  • 1 ½ teaspoons smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

  1. Mix the garlic-lime sauce: In a small bowl, whisk together the sour cream, mayonnaise, grated garlic, lime juice, cilantro, and salt. Set aside in the refrigerator to let the flavors meld while you prepare the rest of the bowl.
  2. Char the corn: Heat 1 tablespoon of oil in a large cast-iron skillet over medium-high heat. Add the frozen corn in a single, even layer. Let it cook completely undisturbed for 3 to 4 minutes until the bottoms are deeply charred and blistered. Toss the corn and cook for 1 to 2 more minutes, then remove from the heat.
  3. Mix the salsa: Transfer the warm, charred corn to a medium mixing bowl. Add the red onion, jalapeño, cilantro, lime juice, and salt. Toss well to combine and set aside.
  4. Season the shrimp: Pat the shrimp completely dry with paper towels. In a bowl, toss the shrimp with 1 tablespoon of oil, smoked paprika, cumin, garlic powder, salt, and pepper until evenly coated.
  5. Grill the shrimp: Wipe out the cast-iron skillet (or preheat a grill pan) and return it to medium-high heat. Add the seasoned shrimp in a single layer.
