Toasted Coconut Vodka Lime Crush

Recipe by Chloe Davis

A frosty, fizzy blend of rich coconut, tart lime, and smooth vodka that feels like a resort vacation in a glass. A crunchy, toasted coconut rim gives this cocktail a polished, photogenic finish while adding a great textural contrast to every sip.

For the Cocktail

  • 1 ½ ounces (45 ml) vodka
  • 1 ounce (30 ml) cream of coconut (such as Coco Lopez, well shaken)
  • 1 ounce (30 ml) fresh lime juice
  • ½ ounce (15 ml) orange liqueur (such as Cointreau or triple sec)
  • 1 small pinch kosher salt
  • 3 ounces (90 ml) chilled club soda or sparkling water
  • Ice (for shaking and serving)

Instructions

  1. Prep the glass: Rub the rim of a tall highball glass with the lime wedge, squeezing gently to release a little juice. Dip the rim into the toasted coconut, pressing lightly so it adheres securely. Fill the glass with fresh ice and set aside.
  2. Shake the cocktail: In a cocktail shaker, combine the vodka, cream of coconut, fresh lime juice, orange liqueur, and a tiny pinch of salt. Fill the shaker halfway with ice cubes.
  3. Chill and strain: Secure the lid and shake vigorously for 15 seconds, or until the outside of the shaker is completely frosted over and very cold to the touch. Strain the liquid directly into your prepared glass.
  4. Top and serve: Pour the chilled club soda into the glass. Give the drink one gentle stir from the bottom up to integrate the fizz with the creamy base without ruining the bubbles. Serve immediately.

Notes

  • Why it works: Adding a tiny pinch of kosher salt to the shaker acts as a flavor enhancer, cutting through the heavy, syrupy sweetness of the cream of coconut and forcing the tart lime notes forward.
  • Cream of coconut vs. coconut cream: Make sure you buy sweetened cream of coconut (often found in the cocktail mixer aisle), not canned, unsweetened coconut cream or coconut milk from the baking aisle. The drink relies on the sugar in the cream of coconut for its sweetness.
