One-Pan Parmesan-Lemon Chicken and Quinoa

This one-pan Parmesan-lemon chicken and quinoa rescues the grains from being boring by staggering when everything hits the skillet. You get a streamlined dinner where the broccoli florets stay vibrant and crisp-tender, and you only have one pan to wash when the night is over.

Why the Staggered Skillet Works

Quinoa needs about 15 minutes to fully simmer, but fresh green vegetables turn to mush if trapped in boiling liquid for that long. Giving the grains an 8-minute head start before scattering the broccoli and zucchini on top ensures every ingredient finishes cooking at the exact same moment.

How to Make the Chicken and Quinoa Skillet

Coat and brown the chicken. Toss the cubed chicken with the Dijon mustard, Italian seasoning, kosher salt, black pepper, and olive oil. Heat the remaining oil in a large skillet over medium-high heat. Sear the meat for 3 to 4 minutes until you see a light golden crust.

Don’t try to cook the chicken through right now. A quick sear just anchors the spices to the meat before it finishes gently steaming later.

Sauté the aromatics. Lower the heat to medium. Sauté the chopped onion for 3 to 4 minutes, using its moisture to scrape up the browned bits left in the pan. Stir in the minced garlic for 1 minute.

Simmer the quinoa. Stir in the rinsed quinoa and toast it for a minute. Even if the bag says pre-rinsed, run the grains under cold water first; otherwise, the bitter saponin coating will clash directly with the delicate lemon juice we add at the end. Pour in the chicken broth, bring it to a boil, then reduce the heat to low. Cover tightly and simmer for 8 minutes.

Steam the vegetables. Uncover the pan and work quickly. Scatter the broccoli florets and sliced zucchini over the hot, partially cooked grains. Lay the seared chicken and its resting juices across the vegetables. Cover the skillet again, keeping the heat on low, and simmer for 7 to 9 minutes until the liquid vanishes and the meat hits 165°F.

Rest and finish. Remove the skillet from the heat and leave the lid untouched for 5 minutes. That trapped, gentle carryover steam is exactly what turns the broccoli tender without turning it grey, while the quinoa finishes absorbing the remaining chicken juices. Uncover and gently fold in the Parmesan cheese, lemon zest, lemon juice, and torn basil.

Storage and Reheating

  • Store the cooled skillet mixture in an airtight container in the refrigerator for up to four days.
  • Reheat individual portions in the microwave on medium power so the chicken breast pieces do not turn rubbery.
  • If the quinoa feels dry the next day, sprinkle a few drops of water over the grains before reheating to create fresh steam.

Quick FAQs

Do I have to use white quinoa?

White quinoa cooks the fastest and offers the fluffiest texture. Tri-color or red quinoa requires slightly more liquid and a few extra minutes to soften, which will throw off the precise timing for the vegetables.

Can I chop the vegetables ahead of time?

Yes, you can chop the broccoli, zucchini, and onion up to two days in advance and keep them in a sealed container in the fridge to speed up the prep.

Taste the grains right in the pan to see if they need one final pinch of salt before plating. If this single-skillet method makes your dinner routine a little easier, save the recipe so you have the exact timings handy for next week.

Ingredients

Scale

Chicken & Marinade

Quinoa & Vegetables

  • 2 tbsp olive oil, divided
  • 1 medium yellow onion, chopped
  • 3 large cloves garlic, minced
  • 1 cup (170 g) white quinoa, rinsed well
  • 2 cups (475 ml) low-sodium chicken broth
  • 3 cups (270 g) small broccoli florets (about 1 small head)
  • 1 medium zucchini, quartered lengthwise and sliced

The Finish

  • 1/4 cup (25 g) freshly grated Parmesan cheese, plus extra for serving
  • Zest of 1 large lemon
  • 1 tbsp fresh lemon juice
  • 1/4 cup packed fresh basil leaves, torn

Instructions

  1. Coat the chicken: In a medium bowl, toss the chicken pieces with the Dijon mustard, Italian seasoning, kosher salt, black pepper, and 1 tablespoon of olive oil until well coated.
  2. Brown the chicken: Heat 1 tablespoon of olive oil in a large, deep skillet over medium-high heat. Add the chicken in a single layer and sear for 3 to 4 minutes, turning occasionally, just until the outside is browned (it will not be cooked through yet). Transfer the chicken and any juices to a plate.
  3. Sauté the aromatics: Lower the heat to medium and add the remaining 1 tablespoon of olive oil to the skillet. Toss in the chopped onion and cook for 3 to 4 minutes, scraping up any browned bits from the chicken, until softened. Add the minced garlic and cook for 1 minute until fragrant.
  4. Simmer the quinoa: Stir the rinsed quinoa into the skillet and toast it for 1 minute. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover tightly with a lid, and simmer for 8 minutes.
  5. Steam the vegetables and chicken: Remove the lid and quickly scatter the broccoli florets and zucchini slices over the partially cooked quinoa. Lay the browned chicken pieces and their resting juices evenly over the vegetables. Cover the skillet again and continue to simmer on low for 7 to 9 minutes, or until the liquid is fully absorbed, the vegetables are crisp-tender, and the chicken reaches an internal temperature of 165°F (74°C).
  6. Rest and fluff: Remove the skillet from the heat and leave it covered for 5 minutes to allow the quinoa to steam and fluff up.
  7. Finish and serve: Uncover and gently fold in the Parmesan cheese, lemon zest, lemon juice, and torn basil. Taste for seasoning, adding a pinch of salt if needed. Serve warm with extra Parmesan on top.

Notes

  • Why it works: Quinoa takes about 15 to 17 minutes to fully simmer, but broccoli and zucchini turn to mush if boiled for that long. By giving the quinoa an 8-minute head start before adding the vegetables and returning the chicken to the pan, everything finishes cooking at the exact same moment.
  • Rinse the quinoa: Even if your package of quinoa says “pre-rinsed,” giving it a quick run under cold water in a fine-mesh strainer removes any remaining saponin—a natural coating that can leave a bitter, soapy aftertaste.
