Ready to bake? Here’s what you need:

Ingredients:

  • Cake:
    • 2 cups almond flour
    • ½ cup coconut flour
    • ½ cup melted, refined coconut oil (not coconut flavored)
    • ½ cup sour cream (Greek yogurt or coconut cream work too!)
    • ½ cup Joy Filled Eats Sweetener (or your preferred sugar alternative)
    • 4 eggs
    • 2 teaspoons vanilla extract
    • 2 teaspoons baking powder
    • ½ teaspoon salt
  • Apple Filling:
    • 2 cups chopped Granny Smith apples (peeled)
    • 1 cup brown sugar sweetener (or make your own!)
    • 6 tablespoons melted butter
    • 2 tablespoons almond flour
    • 1 tablespoon ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Combine all cake ingredients in a large bowl and mix well. The batter will be thick, that’s okay! Spread it evenly in the prepared pan.
  3. In a separate bowl, mix the chopped apples, sweetener, melted butter, almond flour, and cinnamon. Spread this filling over the cake batter.
  4. Bake for 40 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.

Tips & Tricks:

  • Want it even lower in carbs? Use jicama instead of apples, following the method in Joy Filled Eats’ Keto Apple Crisp recipe.
  • Prefer a different sweetener? Check the recipe notes for substitution suggestions.
  • Store leftovers in an airtight container in the freezer for up to 2 months. Thaw in the refrigerator before serving.

Very good cake. I was looking for a pear cake recipe and didn’t find one I wanted to try, til I saw this one. I made it with pears instead of apples, it turned out wonderful, my husband and I really enjoyed it. I used Swerve sweetener granular and for the brown sugar I used Swerve brown but just used 1/2 cup I thought the 1 cup would be too sweet.
